One of the best seasonings that I would recommend to anyone the loves southern food with lot’s of flavor is this Blackened Seasoning. It falls right between Cajun Seasoning and Creole, just not as spicy as Cajun or as Salty as Creole but a nice balance of dried herbs with all of the other common ingredients like paprika, onion, garlic and pepper. It goes great on meats like chicken or barbecued pork ribs, it’s amazing on fish and shrimp and I’ve also created some amazing pasta recipes with this seasoning as well. This recipe is what I used for seasoning in my last video recipe, “Ribeye Chicken Fried Steak“, and I promised that I would show you how to make your own today.

Blackened Seasoning Hacks

If I’m completely honest about my Blackened Seasoning recipe, I don’t make it exactly the way I tell you in the video or in the ingredients below. The ingredients I list down below make a phenomenal seasoning but it’s not exactly what I do. For example, instead of sea salt, which is great, I use Himalayan Salt because my mother in law gave me a ton of it for Christmas. Instead of just using dried Thyme, I use Italian Seasoning which adds 4 more earthy ingredients including Basil. Some folks add Basil to their Blackened Seasoning anyway so why not throw in Rosemary and marjoram, too. It already has the Oregano.

Blackened Seasoning Ingredients:

3 tbsp Smoked Paprika
2 tsp Onion Powder
1 1/2 tsp Salt
1 tsp Garlic Powder
1 tsp Black Pepper
1 tsp Dried Thyme
1 tsp Mexican Oregano
1/2 tsp Cayenne Pepper

This Vegetable Chili, for me, is really exciting.  Because this time of year I get to start, slowly but surely, harvesting what I’ve been growing in my garden all summer long.  In this video I was able to use my Zucchini and Yellow Squash.  Everything else unfortunately isn’t ready to be picked yet but I was able to pick up those ingredients at the store.

4 Bean Vegetable Chili

I’m using 4 different kinds of beans in this Vegetable Chili recipe; Pinto, Black, Red and Garbanzo Beans but you can use whatever you like.  The basic idea behind this recipe starts with the Cajun Holy Trinity; Onions, Celery, Bell Peppers and chopped Garlic.  Then I like to work my way up the pot with the larger vegetables, Tomato Sauce and then the seasonings before I add the beans.  But once all 4 cans of those are in, I add the broth and simmer for 10 minutes with the lid.  In no time you will have the absolute best Vegetarian Chili you have ever had.  In fact the only thing that would make this Vegetable Chili recipe better is Chicken!

Vegetable Chili Ingredients:

1 can Pinto Beans
1 can Black Beans
1 can Red Beans
1 can Garbanzo Beans
1 can Tomato Sauce
3 Cups Vegetable Broth

1 Onion, chopped
1 Bell Pepper, chopped
1 Celery Stick, chopped
1 Garlic Clove, chopped
2 Roma Tomatoes, Chopped
1 Zucchini, chopped
1 Yellow Squash, chopped
1 Corn on the cob, sliced
1 Chipotle Pepper in Adobo Sauce, minced
1/3 cup Fresh Cilantro, chopped
3 tbsp Olive Oil, for sauteing

1 tsp Coriander
1 tsp Chili Powder
1 tsp Garlic Powder
1 tbsp Cumin
1 tbsp Oregano
1/2 tsp Cocoa
Salt and Pepper to taste

Meatballs

These Meatballs are absolutely without a doubt off the hook.  I wondered off into unknown territory, combining the idea of Chinese sauces with Italian Seasonings and it worked Beautifully.  I originally filmed this with my Spaghetti Recipe, but, I realized that this recipe really needed to stand alone because Meatballs are good in so many different recipes.  Although the list of ingredients seems at first glance a bit ridiculous, every single  ingredient serves a purpose.  I hope you try these Meatballs soon!

MEATBALLS Ingredients:

2 lbs Ground Beef
1 lbs Ground Sausage
2 eggs
1 chopped Onion
1/2 Chopped Julian Bell Pepper
1 handful of fresh chopped Parsley
1 pkg Ritz Crackers
1/4 cup Parmesan Cheese
1/4 cup Hoisin Sauce
1/4 cup Ketchup
2 tbsp Tempura Dipping Sauce (light soy sauce, water, vinegar, sugar and Lemon Juice mixed)
2 tbsp Sriracha Rooster Sauce
3 chopped Cloves of Garlic
1 tbsp Sugar
1 tbsp Thyme
1 tsp Salt
1 tsp Black Pepper

Combine all the Ingredients in a bowl and roll 1 1/2 inch meatballs and place on a baking sheet or in cupcake pans.  Bake at 400 degrees for 20 to 25 minutes.
