The Best Barbecue Sauce

This Chinese Barbecue Sauce is based on P.F. Chang’s recipe which is used in several different menu items, including: Spare Ribs, Pork Medallion and their Barbecue Chicken Salad.  I’ve taken the exact Restaurant size recipe and dumbed it down to a house hold portion.  And when I said this recipe is “based” on the Corporate recipe, I mean, it’s more or less the exact same one, only I cut the sugar in half.

The Barbecue Sauce Breakdown

Chang’s makes 5 gallons of this sauce at a time and 2 1/2 gallons of it is sugar.  That’s just ridiculous.  Half of their recommended sugar amount still gets you a fantastic BBQ sauce.  So rest assured, knowing now, that you have everything you need to know about the China Bistro’s Barbecue Sauce Recipe!

Chinese Barbecue Sauce Ingredients:

1 qt Ketchup
1 cup Hoisin Sauce
1 cup Plum Sauce
2 cup Sugar
1/4 tsp Five Spice Powder
1/4 tsp Baking Soda

This recipe makes 2 quarts of Chinese Barbecue Sauce.

The Best Wontons Recipe

If you like Chinese Wontons, you’re going to love this Red Sauce Wontons recipe.  It’s generally sweet and spicy but you can control exactly how much you want of each, easily.  It’s true that this recipe was once on P.F. Chang’s menu.  I’m not quite sure if it is anymore but I’ve broken down a restaurant size recipe and created this family size equivalent with medium heat.  So feel free to adjust the Chili Oil, Chili Paste and sugar to your desired preference.

Pot Stickers are also called Gyoza, which is seasoned and flavor ground pork, wrapped in a round wonton wrapper and shaped like a crescent moon, steamed, then pan fried.  Shrimp Dumplings are very similar, only those wonton wrappers are square and are stuffed with seasoned and ground shrimp, instead, then steamed and pan fried. Oh, and did I mention the Dipping Sauce?  Mmm, mm, mm!

Red Sauce Wontons Ingredients:

Wontons
1 pkg Wonton Wrappers
1/2 lbs Ground Pork
1/4 tsp Powdered Ginger
1/4 tsp Garlic Powder
1 tsp Oyster Sauce, optional

Red Sauce
1 cup Soy Sauce
3 tbsp White Vinegar
1 tbsp Chili Oil
1 tbsp Chili Paste
1 tbsp Sesame Oil
1/4 cup Sugar
2 Garlic Cloves, chopped
1 tbsp Canola Oil

Garnish
2 Green Onions, chopped
1 Bunch Cilantro, chopped

Serve 5 Wontons with 2 oz of Sauce and Garnish with Green Onion and Cilantro.

The Best Lobster Sauce

If you’ve ever ordered Lobster Raviolis or pasta with a Lobster Sauce from an Italian Restaurant and they prepare it right, it truly is stunning.  It can be prepared several different ways but it usually always has cream.  You can even put roasted tomatoes in it if you’d like but I like it best prepared the way I show you in this video recipe.  There’s also a nice touch of almond in the sauce that tastes real sweet thanks to the added Amaretto.  You’ll swear you’ve died and gone to Italian Heaven.

Lobster Sauce Ingredients:

8 oz Cheese Raviolis or Pasta, cooked
2 Lobster Tails, cooked
2 oz unsalted butter
1 Garlic Clove, chopped
1 Green Onion, chopped
2 tbsp Fresh Parsly, chopped
1/2 tsp anchovy paste
3/4 cup Lobster Stock or Clam Juice, with Crab boil seasoning
2 ounces Amaretto or cognac
1/2 cup heavy cream
1 tbsp Lemon juice, freshly squeezed
2 tbsp of Parmesan Cheese
