A Grilled Rockfish is a Waste!

Grilled Rockfish isn’t one of my favorite recipes.  But if you’re going to do it, there’s a few things you should know and understand.  This Butter Marinade is probably the best ingredients to apply to a Rockfish, so in a way, you’re in good hands.  However, taking it to the grill, it loses so much of the brilliance this Marinade can offer a fish like this.  So even though I demonstrate this recipe as Grilled Rockfish in the Video, I would still recommend that it be wrapped in tinfoil first, then grilled.  If not, apply the ingredients in a melted form after you’ve salt, peppered and grilled your fish.  That or go back to the old pan fried method, which is excellent.

Grilled Rockfish Ingredients:

2 Rockfish Filet’s
1 chopped Green Onion
1/2 tsp fresh chopped Parsley
5 chopped Capers
1 chopped Garlic Clove
1/4 tsp Lemon Zest
1/4 tsp Dill
1/2 tsp Tarragon
2 tbsp Softened Butter
Salt and Pepper to Taste

Make sure that all the Ingredients are chopped really small and fine before you add them to the butter.  Then mix all the Ingredients together and allow the butter to marinate for about 10 minutes before you butter you Rockfish.  Also Salt and Pepper both sides of your fillet’s before you marinate.  Then put on hot grill with medium high heat until the edges turn color, then flip once (2 to 3 min).  For more flavor, grill the fish first with salt and pepper only, then add the ingredients after they’ve been melted in a pan.  Or, you can wrap this fish in Tin Foil with the Herb and Butter coating on the filet, then grill.  You can even take this Grilled Rockfish recipe to the stove and do a Classic Pan Fry if you prefer.

Seafood and Crab Everything!

If you don’t know or haven’t realized by now, Seafood and Crab can go with just about anything.  You can find it in Sushi, Cold Noodle Salads, Cheese Dips for chips or crackers and Sub Sandwich’s like the photo I’ve got here in this article.  The list goes on and on.  Of course it isn’t real Crab Meat though either.  It’s made from imitation crab which consists of mostly Alaskan Pollock, egg whites and red food coloring.  I guess the Pollock is what classifies it as “Seafood” even though there isn’t any real crab.  But the recipe for Seafood and Crab is not so confusing and serves as the basic front line for dozens of other recipes to boot.  Here I make a real basic sub sandwich that would normally have Tomatoes, Banana Peppers and olives on it as well if I were using a bigger loaf.  But I use the basics just to show you how you can still get your fix by just using a few ingredients.

Seafood and Crab Ingredients:

2 cups Imitation Crab meat
2 chopped Green Onions
1 chopped Garlic Clove
1 cup Mayonnaise
1 tbsp Olive Oil
Salt and Pepper to taste

Just mix all the ingredients together at once in one bowl and add the Seafood and Crab to your favorite recipe or dish.

The Best Bruschetta

Notice my Title question about Tomato and Basil Bruschetta isn’t a question; it’s a statement.  It’s absolutely the truth.  Only the finest Italian ingredients can pull this off, and I just so happen to have the ingredients to the best recipe on earth for you and your loved ones to personally enjoy what you already love, or what you thought was just an okay appetizer.  My recipe is guaranteed to kick your opinion up a notch no matter what the case!

Basic Essentials

First you need to understand that there are various recipes and different styles of Bruschetta; Mushroom or my Sweet Pepper Bruschetta, for example, but there is usually only one specific recipe on the menu, at your local favorite Italian Restaurant and that’s Tomato and Basil Bruschetta.

The secret to great Bruschetta, no matter which variation you choose, is fresh ingredients.  The ones that make a difference anyway, and the one that makes the biggest difference is Basil.  Never EVER use dried basil.  Dried Oregano, Thyme, Rosemary, Marjoram and Sage are all great examples of seasonings that taste wonderful when they are dehydrated but, I’m telling you, Basil is not one of them for this recipe.

Tomato and Basil Bruschetta Ingredients:

2 Roma Tomatoes
1/4 Chopped Red Onion
1 Chopped Green Onion (Scallions)
1 Large Garlic Clove or 2 average 5 Large Chopped
Several FRESH Basil Leaves
1 tsp Italian Seasoning (Oregano, Thyme, Marjoram, Sage, Rosemary, Basil)
1/4 tsp Margarita Salt or Kosher, Sea Salt if you prefer
1/4 tsp Black Pepper
1/4 cup Olive Oil

Chop all Veggies very small, especially the onion, but don’t turn your tomatoes into soup.  Combine all ingredients and serve your Tomato and Basil Bruschetta over the top of your favorite toasted Italian bread or French Baguette.
