The Best Dirty Rice, Ever!

I just can’t say enough about this Dirty Rice recipe.  I’m telling you, truly, it’s the best version I’ve ever had and I’m not just saying that because it’s my recipe.  My wife and I just kept going back for seconds, thirds and fourths.  Okay, there was nothing left when we got done eating and my kids loved it too.  Now that’s saying something because this recipe has liver in it.  It’s true, I designed this recipe to be more family friendly and than the traditional spicy recipes but don’t let that steer you away from trying it.  Some chopped peppers and a dash of Cayenne will quickly put you back in business, if you like it hot, and I guarantee this recipe will be at the top of your list of rice recipes, from here on out.

Traditional Dirty Rice

Most Dirty Rice recipes have a kick to them.  This means peppers and spice.  I avoid both in this version for several reasons.  First, because it makes it more family friendly and, second, because it can easily be added to this recipe, with out changing a thing, if you prefer it.  And, third, this version is absolutely amazing.

I mentioned before that I don’t use peppers in this recipe.  I add sweet peas instead and as an alternative to using Old Bay or something even spicier, like “Slap Ya Mama”, I use Knorr Beef Bouillon.  Now that’s not to say that any beef bouillon will work, because I’m not sure that it will.  I just know that Knorr is uniquely seasoned and balanced to make this Dirty Rice perfect.  In my opinion, it’s a lot like Ramen Noodle season packs or the seasoning pack found in a box of Rice-A-Roni.  So know that I’m not advertising for Knorr, I just know that it just works wonders in this dish.

Dirty Rice Ingredients:

2 cups Rice, uncooked
4 cups Water
8 oz Ground Pork
4 oz Chicken Liver
2 Garlic Cloves, chopped
1/2 Onion, chopped
2 Green Onions, chopped
1/2 cup Fresh Parsely, chopped
1 Celery Stick, chopped
1 Cup Peas
2 tbsp Knorr Beef Bouilion
1 Stick Butter

Bacon Fried Shrimp with Pepper Jack Cheese

The Best Bacon Fried Shrimp

When I first had Bacon Fried Shrimp, all I could do was melt into myself with pleasure.   I remember my head tilting back with my eyes closed as that bacon and shrimp exploded with flavor with each bite.  Oh… and did I mention the Pepper Jack Cheese?  Wow!  Each one of these prawns is stuffed with cheese before they’re wrapped with an entire piece of bacon, then they are each seasoned with black ground pepper before they’re fried to perfection.

Grilling Bacon Fried Shrimp

Obviously this recipe is called, “Bacon Fried Shrimp” but don’t let that discourage you from taking these pork prawns to the grill.  These are perfect for barbecue’s and parties.  Technically you could even bake them if you’re little heart ever so desired.  It doesn’t really matter.  Just make sure, like any pork product, it’s cooked thoroughly and all the way through.  Oh, and just for kicks, I whipped up a Spicy Mayo Dipping Sauce I really think you’re going to like.  It really compliments the pa-pa-POW of the Shrimp!

Bacon Fried Shrimp Ingredients:

1 doz. Jumbo Shrimp, pealed and deveined
1 pkg Bacon, thinly sliced

Spicy Mayo Dipping Sauce
1/4 cup Mayo
1 tbsp Ketchup
1 tsp Worcestershire
1 tsp Sriracha
1/2 tsp Horse Radish
1 pinch of Dill

Cook your Bacon Fried Shrimp in 1/2 inch of Canola oil and fry for 5 minutes on each side, then serve.

Cheese Bombers with Bacon

Cheese Bombers are the BOMB(pun intended).  What are they?  Grands, Flaky Layers, Biscuits, cut into quarters, flattened and filled with Mozzarella Cheese, then wrapped with Bacon and fried.  The only thing that would make these better, in my opinion, is some chopped Jalapeno Peppers in the mix.  Maybe Pepper Jack Cheese, instead of Mozzarella, would be the way to go.  Either way, it would give Jalapeno Poppers a run for their money because they’re that good.

Frying Cheese Bombers

One of the most common questions I get about this recipe is, “Can these be baked instead?”  The answer is no.  You run the risk of burning the biscuits or under cooking the bacon.  To insure that both cook evenly, they need to be submerged in a deep fry.  Do this and your Cheese Bombers will turn out perfect, every time.

Cheese Bombers Ingredients:

2 cans Grands flaky Biscuits cut into fours
1 lbs Mozzarella Cheese Squares 3/4 to 1 inch thick
1 pkg Bacon slices cut in half
Oil for Frying
