Fast and Easy, Homemade Crepes!

These Homemade Crepes are fantastic, I’m not even going to lie. It’s a Banana infused batter with vanilla yogurt and a fresh homemade cherry topping!  You are going to love these!  There are videos and ingredients below for both the Crepe BAtter and the Cherry Topping, so get to it and happy cooking!

Homemade Crepe Ingredients:

1 1/2 cup Milk
1 cup Flour
1 Egg
1 tsp Sugar
1 tsp Vanilla
1 Banana (optional)
1/4 tsp salt
1/2 tsp melted butter per pancake

Cherry Topping Ingredients:
3 to 4 cups Fresh Pitted Cherries
1 cup Water
1 cup Sugar
1/8 tsp Chinese Five Spice Powder (or just cinnamon)
1/8 tsp Nutmeg
a pinch of Cayenne Pepper (optional, but it;s GREAT)
1 tbsp Cornstarch
1 tbsp Water

If Egg Rolls are on the menu, you can be sure that I’m going to get them.  I’ll even buy them at Jack in the Box or 7 eleven, because I like them that much.  And, if you want to take it step further, dip the Egg Rolls in a Chinese Frying batter, just like the batter that’s on Sweet and sour Pork or Chicken, and then fry it.  Mm-mm; that’s good sheet!  But for this recipe, let’s just focus on the basics, and keep it simple.

Vegetable Egg Rolls consist mostly of one simple ingredient.  Any guess’s?  That’s right, vegetables!  Which means you can put practically any vegetable you want inside these, and as long as you follow a few basic rules, they’re going to turn out great!  First, you have to season your veggies with a light saute.  I say light because you don’t want to over cook your ingredients before you fry them, thus cooking them a second time and creating a soggy flavorless mess.  That being said, 1 minute of pan time is all you need to lightly salt and pepper, maybe a pinch of sugar for sweetener and your favorite sauce.  In this case I use Tempura Dipping sauce, and I talk about it HERE!  As for the rest of my recipe, I just use a coleslaw premix I bought in the produce with the addition of Bean Sprouts.  Egg Roll Wrappers can usually be found there too.

Egg Roll Ingredients:

For 8 Egg Rolls I use
Egg Roll Wrappers
1/2 bag of Coleslaw Premix (about 8oz)
1/2 cup Bean Sprouts
2 tbsp Tempura Dipping Sauce (Teriyaki is a half decent substitute)
1 tsp Sugar
Salt and Pepper to taste

If you want a an Asparagus recipe that is simple and delicious, it doesn’t get any easier than this.  It’s the very foundation for many other recipes out there but it doesn’t need to be anymore complicated.  A simple blanch and sear from a light pan fry, with olive oil, salt and pepper, is all you need to achieve perfection.  Asparagus  cooked like this not only tastes incredible but goes great with just about any main course.

When I eat Asparagus, I don’t want to sink my teeth into a limp noodle.  I want a vibrant vegetable with a light crisp that melts in my mouth like butter.  Asparagus that is cooked like that doesn’t just seduce my pallet with flavor, it gives my body the nutrition it needs because it isn’t cooked until it’s dead.  Always try to leave some life in your cooked vegetables.  Not only will your body thank you, your taste buds will as well because the flavor will be preserved with the nutrients.  Your Asparagus will be delicious and cooked perfect every time.

1 bunch Asparagus
1 qt Boiling Water (Blanching)
2 tbsp Olive Oil
Salt and Pepper to taste
