Shrimp Ceviche is so Refreshing

All of the ingredients are designed to pack a wallop of nutrition and explode with flavor.  It’s got Onions, Peppers, Tomatoes, Avocado, Cucumber and a list of other seasoning’s and ingredients you’re going to love.  You can serve this with chips, eat it plain as a salad, serve as a Tostada or, my favorite, as a Cocktail in a glass with Clamato!

Shrimp Ceviche can, technically, be made with vegetables only but traditionally it’s made with either Tilapia or Shrimp.  The secret is cook the meat in the citric acid of freshly squeezed Lemon and Limes.  I find this method very effective with the fish but I find that it makes the shrimp a little pasty and less pleasant to eat.  So I like to steam my shrimp before I marinade it in the juice.  I get a ton flack from Hispanics that see me do it this way in the video but the results turn out virtually the same.   The texture of the shrimp is better and the flavor of the Lemon and Lime marinade is forever present because the citrus is so potent.  Therefore, trust me with the steaming in this recipe and enjoy your Shrimp Ceviche!

Shrimp Ceviche Ingredients:

  • 1 pound raw shrimp, peeled and deveined
  • 2 lemons
  • 2 limes
  • 1/4 cup Orange Juice
  • 1 cucumber, chopped
  • 1/2 Onion, chopped
  • 1/2 Jalapeno Pepper, diced (optional)
  • 1 cup Tomato, diced
  • 1 Avocado, chopped into 1/2-inch pieces
  • 1 tbsp Cilantro, chopped
  • 2 tbsp Olive Oil
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon Black Pepper
  • Clamato Juice (optional)
  • Tabasco Sauce (optional)

Steam Shrimp for 1 minute then remove and place in a bowl.  Then add the Lemon, Lime and Orange juice, stir and let it marinade for 20 minutes.  Chop all the remaining ingredients and combine in a separate bowl.  Add the Salt and Pepper, then stir.  Strain the Shrimp but add 1/4 cup of the juice to the vegetable bowl and add the shrimp, then stir.  Serve Shrimp Ceviche with Tostada Shells, Corn Chips or in a Glass With Clamato over the top.

A Grilled Rockfish is a Waste!

Grilled Rockfish isn’t one of my favorite recipes.  But if you’re going to do it, there’s a few things you should know and understand.  This Butter Marinade is probably the best ingredients to apply to a Rockfish, so in a way, you’re in good hands.  However, taking it to the grill, it loses so much of the brilliance this Marinade can offer a fish like this.  So even though I demonstrate this recipe as Grilled Rockfish in the Video, I would still recommend that it be wrapped in tinfoil first, then grilled.  If not, apply the ingredients in a melted form after you’ve salt, peppered and grilled your fish.  That or go back to the old pan fried method, which is excellent.

Grilled Rockfish Ingredients:

2 Rockfish Filet’s
1 chopped Green Onion
1/2 tsp fresh chopped Parsley
5 chopped Capers
1 chopped Garlic Clove
1/4 tsp Lemon Zest
1/4 tsp Dill
1/2 tsp Tarragon
2 tbsp Softened Butter
Salt and Pepper to Taste

3 Lemon Slices for the grill and presentation

Make sure that all the Ingredients are chopped really small and fine before you add them to the butter.  Then mix all the Ingredients together and allow the butter to marinate for about 10 minutes before you butter you Rockfish.  Also Salt and Pepper both sides of your fillet’s before you marinate.  Then put on hot grill with medium high heat until the edges turn color, then flip once (2 to 3 min).  For more flavor, grill the fish first with salt and pepper only, then add the ingredients after they’ve been melted in a pan.  Or, you can wrap this fish in Tin Foil with the Herb and Butter coating on the filet, then grill.  You can even take this Grilled Rockfish recipe to the stove and do a Classic Pan Fry if you prefer.

Southern Crispy Fried Shrimp Ingredients:

  • 1-2 lbs large shrimp – Use jumbo shrimp for a hearty, meaty bite; leave the tails on for easy dipping.

Instructions

  1. Prepare the Shrimp – Peel and devein the shrimp, leaving the tails on for easy dipping.
  2. Mix the Coatings – In one bowl, combine the flour, salt, pepper, and paprika. In a separate bowl, whisk together the eggs, milk, and hot sauce to create the egg-wash.
  3. Dredge the shrimp by coating each one first in the dry flour mixture. Next, dip each shrimp into the egg wash. Then coat the shrimp in the flour mixture one last time. This will give it an extra-crispy crunch.
