The Best Onion Rings Ever!

So, a few years ago I went shopping for an Onion Ring Batter in a Box Mix.  I wanted something easy, fast and delicious.  To my surprise, I couldn’t find anything even remotely similar to what I was looking for and I can tell you that it wasn’t Beer Batter.  I wanted something Crispy, Sweet yet a little Salty and I didn’t want the batter falling off the ringlets either.  I guess I was asking too much.  The closest thing I found was a frozen bag of Onion Rings right next to the French Fries.  So that worked for the time being but it didn’t really get me any closer to discovering how they’re really made.  Well, long story short, I finally figured it out!  I now have an easy recipe that delivers everything I was looking for and more.

The secret to these Onion Rings lies in the breading.  I needed something that would stick and deliver the crunch and the sweetness I described.  In order to get the flavor and crisp that I was looking for, I quickly realized, I needed both a batter and breading.  A simple egg wash wasn’t going to work.  So I whipped up my “Perfect Tempura” recipe, which I’ve included in a link down below, and mixed together 3 different ingredients for the breading; Corn Meal, Seasoned Bread Crumbs and Panko.  And I said to myself, “Onion Rings, here I come!”

Onion Rings Ingredients:

1 Onion (Yellow or Sweet)
1 1/2 cup Tempura Batter (Click Here)
1/2 cup Panko
1/2 cup Corn Meal
1/2 cup Seasoned Bread Crumbs (Italian works great)
Oil for Frying
Salt to taste

This Firecracker Shrimp recipe is, quite literally, off the hook amazing.  You’re already getting one of the best fried shrimp recipes, in all of the world and then you combine it with this spicy sauce and POW, you’ve got Bang Bang Shrimp.  Now If you’re feeling a little lazy or a bit pressed for time and you don’t want to fry your own shrimp, you can take half the work out of this recipe if you are willing to pick up a frozen bag of fried shrimp.  Even Popcorn Shrimp will work fine.  But If you need a recipe, however, I highly recommend that you CLICK HERE for one of the best!

Firecracker Shrimp Ingredients:

2 lbs Fried Shrimp
2 Green Onions, chopped
12 Red Chili’s
1/4 cup Mayonnaise
1/3 cup Orange Chili Sauce
1/2 tsp Soy Sauce, optional

Snap the Red Chili’s in half and combine them with the chopped Green Onions.  In a small bowl mix the Mayonnaise and Orange Chili Sauce.  Then, In a large pan on High Heat add the sauce first, immediately followed by the Fried Shrimp and the Red Chili’s and Scallions.  Toss and stir the Ingredients for about 20 seconds until all the shrimp is covered in sauce, then quickly remove from the heat and serve your Firecracker Shrimp.

Cheese Bombers are the BOMB(pun intended).  What are they?  Grands, Flaky Layers, Biscuits, cut into quarters, flattened and filled with Mozzarella Cheese, then wrapped with Bacon and fried.  The only thing that would make these better, in my opinion, is some chopped Jalapeno Peppers in the mix.  Maybe Pepper Jack Cheese, instead of Mozzarella, would be the way to go.  Either way, it would give Jalapeno Poppers a run for their money because they’re that good.

Frying Cheese Bombers

One of the most common questions I get about this recipe is, “Can these be baked instead?”  The answer is no.  You run the risk of burning the biscuits or under cooking the bacon.  To insure that both cook evenly, they need to be submerged in a deep fry.  Do this and your Cheese Bombers will turn out perfect, every time.

Cheese Bombers Ingredients:

2 cans Grands flaky Biscuits cut into fours
1 lbs Mozzarella Cheese Squares 3/4 to 1 inch thick
1 pkg Bacon slices cut in half
Oil for Frying
