My Favorite PMGK Slow Cooker Meal

The slow cooker is a busy parents best friend. I know if I wasn’t married, to the most amazing cook out there, that I would be using mine all the time. While Mr. PMGK was working on this top 5 list, I told him that this Chicken and Gravy recipe was my favorite of the 5. I told him I wished that he would make it more often. His response was, you know the recipe(as I shook my head and gave him the look). Everyone knows by now, I do not cook and why would I? I have him!

I can recognize the smell of Roast Beef in the crock pot anywhere. To this day the smell makes my mouth water. Very often growing up I’d wake up to the yummy smell Sunday mornings. If I was lucky I could pull a taste from the pot without someone noticing but with caution. If my mom caught me, it’d be a slap on the hand for sure. When you grow up in a home with 13 children, one crock pot full of meat is hardly enough to go around.

These lit’l smokies are so amazing! They have so much flavor. What I like best about them is that you can throw them in the crock pot and forget about them. Before you now it they’re done. They are my favorite to prepare when I have people over or when we’re making a meal that is going to take a while. No one is ever waiting around hungry for dinner if we make these to snack on while they wait.

Don’t get me wrong this recipe is great but when I hear the word chili followed by the word no beans, my first thought is, “no beans?” When I think chili, I think beans! I’m Hispanic and we most definitely love our beans. However, Chili no beans are so good for so many things. They are my absolute favorite on chili cheese dogs. If you make a crock pot full of these for a party it will be gone before you now it. My husbands first intention, when he created this recipe, was to use this as a filling for fast food style tacos and burritos.

Slow Cooker Kalua Pork

Kalua is Hawaiian for barbecue and it’s traditionally cooked slow and low buried in the ground. Today’s technology, however, has changed drastically and allows us to use appliances like an oven or a Slow Cooker. PMGK makes Kalua Pork both ways. Either way it turns out perfect and so tender! There are benefits to cooking this dish either way. If we don’t want leftovers, we make it in the crock pot and just use a small butt roast instead of a full shoulder. If we want left overs, there are a lot of pulled pork style recipes that whole pork shoulder is good for. For example: My absolute favorite Kalua Pork recipe is our classic Kalua Pork Fries. If you haven’t tried them yet you are truly missing out but it doesn’t end there. My husband has posted Kalua Pork Burritos, Tamales and another recipe to cook the whole shoulder roast in the oven.

Frozen Beef and Cheese Burritos

The Best Beef and Cheese Burritos

If you like to have quick “go to” frozen burritos in your freezer, that taste amazing, then look no further because these Beef and Cheese Burritos are phenomenal and they’re so easy to make. I’m talking about oven roasted Barbacoa beef, green chili’s and cheese all wrapped up in to simplified zip lock baggies, just waiting for the taking. All you have to do is follow my simple instructions and these burritos can be sitting in your freezer, ready to go at a moments notice.


Barbacoa Beef and Cheese Burritos

In my opinion, Barbacoa makes some of the best Beef and Cheese Burritos and I’ll tell you why. There is flavor beyond flavor, in a Barbacoa roast, that is unmatched because of the many infused ingredients with the slow and low cooking method. You can use a plain old beef chuck or butt roast for the recipe and season it any way you like, but I highly recommend using the recipe I posted a while back and you can find my Chipotle style Barbacoa recipe here.

I use one 10″ Tortilla but you can use what ever size you like. I add approximately 7 ounce’s of Barbacoa roast beef, a small pinch of cheese and a tablespoon of green chili’s for each burrito.

Sides for Beef and Cheese Burritos

There are a lot of different condiments and sides that go really well with Beef and Cheese Burritos, and I’ve got all of the recipes right here. Beef and Cheese Burritos Ingredients:

1 Shredded Barbaco Roast
1 pkg Flour Tortillas
1 cup Monteray Jack or Mild Cheddar Cheese, grated
1 can Green Chili’s

Freeze the Beef and Cheese Burritos over night and reheat each one in the microwave or the oven. Microwave on high for 2 to 3 minutes or in the oven for 30-35 min at 375 degrees Fahrenheit.

The Best Kalua Pork Roast

If you’re looking to turn a standard Pork Shoulder or Butt Roast(above) into fall off the bone tender Kalua Pork(below), then you’ve come to the right place.  You don’t have to dig a hole in the ground and wrap the roast in banana leaves or burlap, either.  I’m going to show you a simple recipe that can be cooked right in the oven and the results are absolutely incredible.

How to make an Oven Roasted Kalua Pork Roast

This Kalua Pork Roast is unbelievably amazing.  The secret lies in the slow and low method and only two ingredients that give it that authentic fire roasted flavor everyone just devours.  Liquid Smoke and Hawaiian Salt is all you need to take your standard Pork Roast to the next level.  Kosher Salt is the alternative if the other isn’t available to you but there are a ton of other benefits derived from the Hawaiian salt that most people don’t know about and you can read about it HERE.  And believe it or not, it really does effect the flavor and in my opinion its easily twice the difference.  I also like to add a sauce that I partially derived from my Mongolian Beef recipe and it is fantastic over the pork and rice.  Also, Kalua Pork is usually served with Hawaiian Macaroni Salad and my recipe for that is below as well.

Kalua Pork Roast Ingredients:

1 10 lbs Pork Shoulder or Butt Roast
1 tbsp Liquid Smoke
1 tbsp Hawaiian or Kosher Salt (preferably Hawaiian)

Mongolian Sauce
2 teaspoons vegetable oil
1/2 teaspoon Ginger, minced
1 tablespoon Garlic, chopped
2 tsp Hoisin Sauce (optional)
1/2 cup Soy Sauce
1/2 cup Water
1/2 cup Rice Wine Vinegar
1/2 cup Brown Sugar
1/4 cup Mirin
