The Best Crab Dip

This Crab Dip is great to serve at home, parties or barbecues and it can easily be made, in advance, and kept refrigerated until needed. One of the best things about this dip is that it can be served hot or cold and either way is absolutely delicious. I show you how to prepare both and there’s only a few ingredients so, don’t worry about breaking the bank with grocery shopping.

Crab Meat for Crab Dip

For this Crab Dip recipe, I’m using real crab meat and I get it from a refrigerated can. If you want to save money, this is one way to do it. I bought this 16 oz. can for $13 bucks, which may sound expensive but consider the alternative. A pound of Crab legs is going to cost more for practically half the meat weight because of the shells. This can is solid meat. Savings can be taken a step further, however, if you’re willing to use imitation crab but, in all honesty, it won’t even be close to the same recipe and it absolutely won’t taste the same. If that’s all you have available, though, just make my Seafood and Crab recipe, instead. It’s really good and it’s great served as a dip with crackers.

Cold or Hot Baked Crab Dip

To serve this Crab Dip cold, all you half to do is mix the ingredients and serve. Marinating the ingredients in your refrigerator for a half an hour or over night will improve the flavor but it isn’t necessary. Plus the ingredients are already cold so, it’s really something you can just play by ear.

For a hot baked dip, I just top it off, in an oven safe baking dish, with fresh grated Parmesan cheese and bake in the oven until it’s warm. If I’m serving the dip with a sliced baguette, I usually just toasted the pieces along with the baking of the dip.

Crab Dip Ingredients:

1 8oz pkg Cream Cheese
1/4 cup Sour Cream
8 oz Crab Meat, canned claw
1 Jalapeno, diced
1 Green Onion, diced
1 tbsp Oyster Sauce
1 tsp Sugar
1 pinch of Salt
1 pinch Blackened Seasoning
1/4 cup Parmesan, grated

Be sure to follow the instructions in the Crab Dip video tutorial and I’ll show exactly how to make it. This dish can be served cold immediately or marinated in the refrigerator for more flavor. If you’d like to serve this recipe warm, bake it in the oven at 350° Fahrenheit for 8 minutes, then serve.

Pico De Gallo

Simple Pico De Gallo

This Pico De Gallo recipe is not only simple, it is easily adjusted to your specific tastes and spice preference. Wiki will tell you that the Spanish translation actually means, “Beak of Rooster” but if you want a history lesson, that’s what they’re there for.  Today, I’m just going to show you how to make it.  Just know that this is also known as Salsa Fresca or Salsa Cruda and it can be applied to just about anything you want to freshen and spice up; steaks, tacos, burritos, chili rellenos, potatoes, chili, hamburgers or just plain old chips and salsa.  The truth is, I only filmed and posted this recipe because I needed it for my up and coming, “Crispy Fish Tacos” recipe.  So keep an eye out for that because it’s up next.

Pico De Gallo Seasoning

Most of the flavor, in Pico De Gallo, comes from the fresh vegetables in this recipe and everyone of them are equally important.  It’s usually only seasoned with salt and pepper.  In the video tutorial, I introduce Pico De Gallo seasoning and it really has nothing to do with this particular recipe.  The seasoning is usually applied to other fruits and vegetables to enhance their flavor.  But it has chili powder, salt and citric acid which, much like the lime, brighten the flavor and it’s a fun addition to the mix, if you want to try adding it instead of just salt and pepper.

Another recipe that you should look into is Chimichurri.  It’s very different yet very similar because it still brings the fresh spicy flavor Pico De Gallo brings.  The difference is that one recipe was developed in Mexico and the other in Argentina.  I personally like the Chimichurri better but they’re both so unique and genre specific, you really can’t compare the two.  But, I would highly recommend giving them both a try.

Pico De Gallo Ingredients:

2 Garlic Cloves, chopped
1/2 Onion, chopped
1-2 Serrano Peppers, diced with or without seeds
2 Roma Tomatoes, de-seeded and diced
1 bunch Fresh Cilantro, chopped
1/2 Lemon, squeezed
Salt and Pepper to taste and/or Pico De Gallo Seasoning

Grilled Honey Chipotle Chicken Wings with Tequila and Lime

The Best Chicken Wings Ever

These Honey Chipotle chicken Wings are, by far, the best wings I have ever had.  They are sweet and savory, they are crispy and spicy yet incredibly tender and juicy on the inside.  They have best flavor of just about any barbecue sauce and we’ll talk about the secret to that in just a minute.  But I definitely think that the grilling definitely takes this recipe to a whole new level.  But don’t let that scare you if you don’t have a grill.  I think these spicy buffalo style wings would still be absolutely fantastic fried in oil or baked in the oven.

Honey Chipotle Chicken Wings Sauce

This Chicken Wing Sauce is phenomenal.  I mean it.  I’t fantastic.  My secret for this recipe is definitely in the sauce.  I use Sweet Baby Ray’s barbecue sauce to start, then I add a couple of Chipotle peppers in Adobo Sauce and a fresh clove of Garlic but it doesn’t end there.  Since it’s got that pepper spice I balance it out with Tequila and Lime.  Now, of course, the Tequila is optional but the lime is definitely essential because it adds that Mexican style flavor everyone loves in their Mexican food.  But if you’re not shy, I highly recommend following this recipe to a “T” and add that Tequila.  It takes this Honey Chipotle Chicken Wing Sauce to whole new level.

Honey Chipotle Chicken Wings Ingredients:

3 to 4 lbs Chicken Wings

Chicken Wing Brine
4 cups Water
1/4 cup Salt
2 cups Ice

Honey Chipotle Sauce
1 cup BBQ Sauce (Sweet Baby Rays)
2 Chipotle Peppers in Adobo Sauce, blended
1 Garlic Clove, chopped
1/3 cup Honey
2 oz Tequila
1 Lime, freshly squeezed
