Fast Food style Chili No Beans

So I got this Chili No Beans idea at Taco Bell the other day.  They’re always adding crazy new stuff to their Menu and it just got me thinking.  First off, their food is munchie delicious.  You know what I mean.  The kind of food you crave when you’ve got the munchies.  I swear their staff has got to be stoned half the time when they come up with these recipes.  Anyway, I got thinking about how tender their ground beef is in all of the Tacos and Burritos and then it dawned on me.  It’s got to be a slow cooker.  So I ran home and made up this recipe and it’s just as good if not better.  The real benefits though, however, aren’t that you can now replicate Taco Bell food but you can use it for all kinds of things like Chili Cheese Dogs and Nachos and who’s going to complain about that.  So here is a real easy and simple way to make Chili No Beans and you’re going to love it!

Chili No Beans Ingredients:

2 lb Ground Beef
1 lb Pork Chorizo (or beef)
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
1 tsp Black Pepper
1 1.25 oz pkg Taco Seasoning (regular or Mild)

Spanish Rice is loved, it’s adored yet often underrated.  I remember asking some idiot once how he made his Spanish Rice and his answer was ridiculous.  But, first let me tell you why I asked him and how I came to the conclusion he was an idiot.  This guy was a coworker and there were a lot of other employees that came in Monday mornings, always raving about his weekend barbecues.  Oh, and I should probably mention that he’s Mexican.  Anyway, that and the fact that he “Apparently” cooked all the time, this convinced me that he was probably the man to talk to about his recipe for Spanish Rice.  His answer was, “Tomatoes and Seasoned Salt”!  So long story short, that’s when I decided he was an idiot because his answer was just ridiculous.

IMG_1006So all B.S. aside, here’s what you really need to know about Spanish rice.  Rice needs to be constituted, and much like pasta, the water going into it should be seasoned.  The reason is, most of the flavor found in Spanish Rice is absorbed into the rice itself.  So it’s important that all the liquid going into the pot, be exactly how you want your rice to taste in the end.  It’s that simple.  Yes it needs to be a tomato base but it should have some spice and a little bit of a kick.  That’s why I use my salsa recipe.  CLICK HERE if you want that.  but you don’t want to water down the flavor by topping it off with water.  That’s why you should use Chicken Stock, or chicken Bouillon.  I use Knorr!

Spanish Rice Ingredients:

1 1/2 cups Long Grain Rice
2 cups Chicken Stock (or Bouillon)
1/2 chopped Onion
1 cup Salsa
Oil for cooking

Rinse your rice with water 3 times before cooking.  Add 2 tbsp of oil to a hot pan and saute the onion.  Next add the rice and stir frequently until you lightly brown the rice.  Add your Salsa and Chicken Stock, bring to a boil and cover with a lid and turn the heat down to a simmer for 20 minutes.  Then serve.  If you like a more flavorful rice, I highly recommend trading out one cup of chicken stock and adding one more cup of salsa instead.  Enjoy your Spanish Rice!

Homemade Guacamole

If you’re lucky, you’ve stumbled upon my recipe for Homemade Guacamole and not some other “plain Jane” Witch’s brew.  Even the most popular sites have a very mediocre version of what they think the recipe should be and they are missing the very thing that makes Homemade Guacamole exciting; FLAVOR!  You know the saying that sometimes less is more?  Well, in this case, more is more. That being said, you’re going to want to make sure you’ve got all of the ingredients in the list below before you venture off to the kitchen to make this pot of gold.

Homemade Guacamole Ingredients:

4 Avocados
2 Chopped Garlic Cloves
1 Pinch of Fresh Cilantro
1 Chopped Jalapeno
2 Green Onions (Scallions)
1 tbs Bouillon
1 tbs Oregano
1/2 tsp Cumin
1/2 tsp Black Pepper
1/2 Squeezed Lime

Mix all the ingredients together and add salt to taste.  If you like more of a kick, add some Cayenne or Paprika.  If you can control yourself, over night it in the refrigerator so that the Guacamole can marinate and it will really brings out a ton of flavor.  Just make sure that you cover your Homemade Guacamole so it doesn’t turn brown.
