This Chicken Volcano Quesarito is Awesome and I really think you’re going to love how easy these are to put together. It’s a little time consuming but the slow cooker makes it a cinch and I’m including a recipe for both the Chicken(Chicken and Gravy) or if you prefer the Beef(Chili no Beans), in the links below, to make each Quesarito. So definitely check out both of those slow cooker recipes.
Chicken Gravy
2 Chicken Breasts
2 cans Cream of Chicken Soup
1 pkg Cream Cheese
1/2 tsp Black Pepper
2 Flour Tortillas, each burrito
1 cup Grated Colby Jack Cheese, each Quesarito
2 cup Steamed Rice
1 tbsp Parsley, chopped
1 tbsp Cilantro, chopped
1 tsp Mexican Oregano, crushed
1 bag Spicy Corn Tortilla Chips, Crushed
1 can Nacho Cheese
Salt and Pepper to Taste
This Street Tacos recipe is fantastic and it’s dependent on the availability of the kind of Roast I like to use; Cacheta De Res or Cabeza. If you can find it in a major Super or Grocery Market it will most likely be with the Beef Tongue and the Ox Tail, because it’s Beef Cheek Meat. But, don’t let that intimidate you one bit. It is HANDS DOWN the best meat for street tacos, in my opinion. It’s a bit Gamier, which means more flavor and it really helps set off the additional spices.
I don’t know about you but I like my Street Taco meat tender and the Slow Cooker really helps to take it to that next level. You can add you’re seasoning before or after the roast cooks but I recommend adding it after. Using a slow cooker with a heavy glass lid, like mine has, makes the beef roast sweat a lot of juice that I like to add back into the beef after it’s been pulled and seasoned. Using all of the liquid tends to drown out the added seasoning and will require more if you do but that will be up to you.

If you think outside the box, realize that you can take any of these meat recipes and turn them, completely, into something else. For example: Nacho’s, Rice Bowls, Burritos or Chimichangas, Enchiladas etc.. And, with any of these recipes, I always recommend fresh ingredients, warm tortillas, chopped onion, cilantro and lime. And if you really want to step it up a notch, add tomatoes, cheese, guacamole and sour cream or crema. Follow this regime and you’ll be well on your way to eating some amazing food.
Street Tacos Ingredients:
2 lb Cachete De Res Roast(Beef Cheek Meat)
1 pckg White or Yellow Corn Tortillas
1 Onion, chopped
1 Cilantro, chopped
1 Lime
1 tbsp Cumin
1/2 tsp Chili Powder
1/4 tsp Garlic Powder (optional)
1 cup Beef Broth, from Crock Pot
Salt and Pepper to taste(lots of salt)

Here’s a Chipotle Chicken Recipe you’ll just love and use again and again. It’s tender, juicy and full of flavor. The spice can be adjusted according to your specific tastes. I’ve portioned out the heat to a medium kick so adjust accordingly by adding or subtracting Chipotle Peppers. I’m using canned Chipotle Peppers with Adobo sauce so the smokey taste will spread further. Marination isn’t necessary but it never hurts if you want to throw this in the refrigerator over night or for even just a half an hour. It’s up to you.
Chipotle Chicken for Tacos & Burrito’s
There are a ton of different ways to use this Chipotle Chicken recipe but my favorite way to put this meat to use is with street style tacos, like the photo above or in a burrito. I even like to have it in a rice bowl, with a lot of other veggies, Tex-Mex style. But if you want to go “fast food” with this Chipotle Chicken, I highly recommend loading a burrito, 7 Layer style, with all the works. I’m talking about rice, beans, cheese, guacamole, lettuce and sour cream. That’s one of my favorite ways to prepare this recipe, Chipotle style Taco Hell. 😉
