If you want a an Asparagus recipe that is simple and delicious, it doesn’t get any easier than this.  It’s the very foundation for many other recipes out there but it doesn’t need to be anymore complicated.  A simple blanch and sear from a light pan fry, with olive oil, salt and pepper, is all you need to achieve perfection.  Asparagus  cooked like this not only tastes incredible but goes great with just about any main course.

When I eat Asparagus, I don’t want to sink my teeth into a limp noodle.  I want a vibrant vegetable with a light crisp that melts in my mouth like butter.  Asparagus that is cooked like that doesn’t just seduce my pallet with flavor, it gives my body the nutrition it needs because it isn’t cooked until it’s dead.  Always try to leave some life in your cooked vegetables.  Not only will your body thank you, your taste buds will as well because the flavor will be preserved with the nutrients.  Your Asparagus will be delicious and cooked perfect every time.

Asparagus Ingredients:

1 bunch Asparagus
1 qt Boiling Water (Blanching)
2 tbsp Olive Oil
Salt and Pepper to taste

Cheese Bombers with Bacon

Cheese Bombers are the BOMB(pun intended).  What are they?  Grands, Flaky Layers, Biscuits, cut into quarters, flattened and filled with Mozzarella Cheese, then wrapped with Bacon and fried.  The only thing that would make these better, in my opinion, is some chopped Jalapeno Peppers in the mix.  Maybe Pepper Jack Cheese, instead of Mozzarella, would be the way to go.  Either way, it would give Jalapeno Poppers a run for their money because they’re that good.

Frying Cheese Bombers

One of the most common questions I get about this recipe is, “Can these be baked instead?”  The answer is no.  You run the risk of burning the biscuits or under cooking the bacon.  To insure that both cook evenly, they need to be submerged in a deep fry.  Do this and your Cheese Bombers will turn out perfect, every time.

Cheese Bombers Ingredients:

2 cans Grands flaky Biscuits cut into fours
1 lbs Mozzarella Cheese Squares 3/4 to 1 inch thick
1 pkg Bacon slices cut in half
Oil for Frying

Fry at 350 degrees Fahrenheit for 2 minutes or until golden brown.  Be sure to watch the short video tutorial and I’ll show you exactly how to make these Cheese Bombers.

Chicken Tenders are so much better than McNuggets!  Why would you even torture your children with such rubble, convenience?  Shame on you!  Though I can relate to the quick stroll through a drive through, I just can’t feed my children crap anymore.  In fact the only reason I’m redoing my fried chicken recipe here with you today, other than it’s fantastic, is because of the constant controversy and up roar Micky D’s is always in.  A franchise that size shouldn’t be under that much scrutiny and proverbial gun fire if there truly wasn’t anything wrong with their food.  It’s sad.  I’ve always liked McDonald’s, enough anyway.  I’m not that picky when it comes to a burger joint though.  I’ll hit them all.  But now with GMO’s added to the conspiracy theories, how can we trust any major franchise to make our food?

Chicken Tenders are so easy to make and as always, they taste delicious.  So step into my office, and let’s once again nail down another easy gourmet recipe!

Chicken Tenders Ingredients:

1 chicken breast
1 cup of flour
1 tbsp crab boil seasoning
1 tsp sage
1 tsp thyme
1 tsp oregano
1/2 tsp cumin
1 tbsp black pepper
1 egg
1/4 cup Whipping Cream
Peanut oil for frying

  • Cut the chicken breast into 3/8 inch slices
  • Mix all dry ingredients together in a bowl
  • Whisk the egg and whipping cream together
  • Coat the chicken first in the dry ingredients then in the egg wash and back in the dry ingredients again.
  • Fry at 375 degrees until the chicken tenders float to the top and turn golden brown.
