The Best Stuffed Lobster

I’m completely and utterly in love with this Stuffed Lobster recipe.  Just like the title says, it’s got creamy Shrimp, Bay Scallops and Crab Meat mixed into the Stuffing with a light drop biscuit breading and Bacon.  There is of course a few other ingredients to spice it up a bit but tell me that list didn’t already seal the deal in your mind when you read it to yourself!

Stuffed Lobster Preparation

I can’t stress enough, the importance of having a good set of Seafood Shears when you’re cutting Shell Fish.  Starfrit sent me this pair to use and demonstrate in this video recipe and I personally think they are awesome.  They cut in reverse, which seems to give the blade some added strength when I grip the handles and apply pressure.  So if you’re interested in a pair like this, I highly recommend this set next time you’re cutting shells.

Also, this recipe is designed to heavily stuff two lobsters with seafood but I found that just one can easily be shared between two people.  So that’s something to consider when you’re making this.  2 Stuffed Lobsters will easily feed 4 to 6 people and my Video Tutorial will teach everything you need to know.

Stuffed Lobster Ingredients:

2 Steamed Lobsters, whole
12 oz Bay Scallops
12 Shrimp, peeled and deveined
1 cup Crab Meat
3 pc Bacon, crumbled
1/2 cup Cream Cheese
1 can Cream of Celery
1/2 Red Onion, chopped
1/4 cup Parsley, chopped
3 Fresh Basil leaves, chopped
3 Garlic cloves, chopped
1/4 cup Olive Oil
pinch of Salt
1 egg
1 tbsp Mustard
1 tbsp Worcestershire
1/2 tsp Paprika
2 Drop Biscuits
1/4 cup Seasoned Bread Crumbs
Shake Salt & Pepper throughout entire stuffing

Be sure to watch the short video tutorial and note that the oven time and temperature is 400° Fahrenheit for 20 minutes.  Serve the Stuffed Lobster with lemon and melted butter.

The Best Smothered Salmon

This Smothered Salmon recipe is something I came up with years ago.  My wife has a serious love for this fish so I wanted to create something that was undeniably the best and believe it or not, this recipe can be prepped and cooked in just 15 minutes.  It has a Garlic, Wine and Butter Broth that is just amazingly smooth.  I actually use this to saute the Onions and Peppers as well as steam the fish.  I like to prop the Salmon right over the top of the veggies so the filet can steam from below as well as from above when I top the pan with a lid.  Then after just a few short minutes I smother the fish with Mozzarella Cheese, then cover back up with the lid long enough for it to melt.  Once it has, you have a perfectly cooked Salmon that is ready to serve.  Total cooking time is, approximately, 6 to 7 minutes.  And once it hits the plate, I dash pieces of Bacon, I sprinkle freshly chopped Parsley and then I splash some Balsamic Vinegar right over the top.

Smothered Salmon Ingredients:

1 Salmon Fillet
1/2 Bell Pepper
1/2 Onion
2 tsp minced garlic
1/2 cube butter
1/4 cup white wine
1/2 cup Mozzarella Cheese
1 tbsp fresh or dried Parsley
1 to 2 tbsp chopped Bacon or bits
1 tsp Balsamic Vinegar
Salt and Pepper Salmon to taste
Pinch of cayenne pepper

There are, literally, hundreds of different ways to prepare Ahi Tuna but I like mine Seasoned and Seared.  That usually means that dry ingredients are applied, on all sides, to a cut of Raw Ahi Tuna then cooked and “seared” in a dry frying pan.  Ingredients vary but spices generally get the best results, rarely, herbs are ever applied.  But, one of the easiest ways to make this appetizer is to keep it simple and season with Kosher Salt and Black Pepper.

Ahi Tuna Dipping Sauce

The best part about this Ahi tuna recipe is that it comes with a fantastic Wasabi Vinaigrette that has a sweet Soy Sauce and Sesame Oil influence.  Tell me that doesn’t sound superb!  Sushi fans alike come running for this appetizer anywhere it’s served.  I’ve seen similar recipes served at The Outback, Cheese Cake Factory and P.F. Chang’s even.  All of which have their own unique style.  I think that this one is the easiest to do and that anyone the loves tuna is going to like it.

Seared Ahi Tuna Ingredients:

1 Ahi Tuna Steak
1 tbsp Black Pepper
1 tsp Kosher Salt
1/2 tsp Paprika

Wasabi Vinaigrette
1 tbsp Olive Oil
1 tbsp Soy Sauce
1 tbsp Apple Cider Vinegar
1 tbsp Honey (optional)
1 tsp Wasabi Paste (you can substitute mustard)
1/2 tsp Sesame Oil
1/2 tsp Lemon Juice
