{"id":1929,"date":"2014-11-22T18:03:37","date_gmt":"2014-11-23T01:03:37","guid":{"rendered":"http:\/\/poormansgourmetkitchen.com\/?p=1929"},"modified":"2020-11-09T02:47:31","modified_gmt":"2020-11-09T09:47:31","slug":"chicken-enchiladas","status":"publish","type":"post","link":"https:\/\/poormansgourmetkitchen.com\/devsite\/chicken-enchiladas\/","title":{"rendered":"Chicken Enchiladas"},"content":{"rendered":"<p><a href=\"http:\/\/poormansgourmetkitchen.com\/wp-content\/uploads\/2014\/11\/IMG_1688.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-large wp-image-1930\" src=\"http:\/\/poormansgourmetkitchen.com\/wp-content\/uploads\/2014\/11\/IMG_1688-1024x768.jpg\" alt=\"Chicken Enchiladas\" width=\"725\" height=\"543\" srcset=\"https:\/\/poormansgourmetkitchen.com\/devsite\/wp-content\/uploads\/2014\/11\/IMG_1688-1024x768.jpg 1024w, https:\/\/poormansgourmetkitchen.com\/devsite\/wp-content\/uploads\/2014\/11\/IMG_1688-scaled-600x450.jpg 600w, https:\/\/poormansgourmetkitchen.com\/devsite\/wp-content\/uploads\/2014\/11\/IMG_1688-300x225.jpg 300w, https:\/\/poormansgourmetkitchen.com\/devsite\/wp-content\/uploads\/2014\/11\/IMG_1688-700x525.jpg 700w\" sizes=\"(max-width: 725px) 100vw, 725px\" \/><\/a><\/p>\n<h2>The BEST Chicken Enchiladas<\/h2>\n<p>If there&#8217;s anything in this world that I know well, it&#8217;s Mexican food and these Chicken Enchilada&#8217;s are spot on.\u00a0 I picked up this recipe several years ago and it&#8217;s been one of my favorite ways to make enchiladas.\u00a0 Plus, I&#8217;m a big chicken fan and I&#8217;ll take this recipe, hands down, over any beef enchilada recipe you&#8217;ve got.\u00a0 That is, unless you&#8217;re using my <a href=\"https:\/\/poormansgourmetkitchen.com\/barbacoa-how-to-make-chipotle-style-barbacoa.html\">Barbacoa recipe<\/a>.<\/p>\n<h3 style=\"text-align: left;\">Chicken Enchiladas Ingredients:<\/h3>\n<p>Makes 16<br \/>\n<span style=\"text-decoration: underline;\"><strong>Chicken Mix<\/strong><\/span><br \/>\n2 Boneless Chicken Breasts<br \/>\n4 Boneless chicken thighs<br \/>\n1\/2 Onion, chopped<br \/>\n1 can Corn<br \/>\n1 Chipotle Pepper<br \/>\n1 tbsp Chipotle Pepper Juice<br \/>\n2 Garlic Cloves, chopped<br \/>\n1 tsp Cumin<br \/>\n3 tbsp Olive Oil<br \/>\n1 Juice from Lime<br \/>\nCrock Pot Juice, all of it<br \/>\nSalt and Pepper to taste<\/p>\n<p>1 pkg Corn Tortillas<br \/>\n1 Can Whole Green Chili&#8217;s<br \/>\n1 Can Enchilada Sauce, (<a href=\"http:\/\/poormansgourmetkitchen.com\/enchilada-sauce.html\" target=\"_blank\" rel=\"noopener noreferrer\">Click HERE for Red<\/a> &amp; <a href=\"http:\/\/poormansgourmetkitchen.com\/green-enchilada-sauce.html\" target=\"_blank\" rel=\"noopener noreferrer\">HERE for GREEN<\/a>)<\/p>\n<p><strong><span style=\"text-decoration: underline;\">Garnish<\/span><br \/>\n<\/strong>1 cup Mild Cheddar Cheese<br \/>\nFresh Cilantro, chopped<br \/>\n2 Green Onions, chopped scallions<br \/>\n1\/2 cup Lettuce, chopped<br \/>\nSour Cream, preference amount<\/p>\n<p style=\"text-align: justify;\">Season the Chicken with Salt and Pepper then place in a Slow Cooker and cook for 6 hours on Low. \u00a0Prep Vegetables and Combine the Onion, Corn, Chipotle Pepper and Garlic in a Bowl. \u00a0Set everything else aside. \u00a0When the Chicken is done, carefully remove and separate from the accumulated crock-pot liquid, but save the liquid for later. \u00a0Finger pull or fork apart the Chicken into torn pieces and season with Cumin. \u00a0Then, in a hot pan set on Med-High, add olive oil and the Corn and Onion Mixture, then salt and pepper to taste. \u00a0Cook for 2 Minutes, then add the Chicken, Lime and Crock-pot Juice and stir until everything is mixed thoroughly, then kill the heat.<\/p>\n<p>For each Enchilada, completely dip and submerge 1 Tortilla in the Enchilada Sauce, then lay flat on a plate, cutting board or counter top. \u00a0Add 1 Green Chili to the center and a 2 to 3 tbsp of Chicken Mix, then starting from the back back of the Tortilla, roll towards the front and lay each Enchilada down in a Baking Pan or Casserole Dish. \u00a0Repeat until it&#8217;s full. \u00a0Ladle in 1 cup of Enchilada Sauce over the tops of all the rolled Tortillas, then cover with cheese. \u00a0Bake at 350 degrees for 20 Minutes, then garnish and Serve!<\/p>\n<p>Be sure to watch the short video tutorial and I&#8217;ll show you exactly how to make these amazing Chicken Enchiladas.<\/p>\n<p><iframe loading=\"lazy\" src=\"https:\/\/www.youtube.com\/embed\/nr3O3N0WK-0\" width=\"640\" height=\"360\" frameborder=\"0\" allowfullscreen=\"allowfullscreen\"><\/iframe><\/p>\n","protected":false},"excerpt":{"rendered":"<p>The BEST Chicken Enchiladas If there&#8217;s anything in this world that I know well, it&#8217;s Mexican food and these Chicken Enchilada&#8217;s are spot on.\u00a0 I picked up this recipe several years ago and it&#8217;s been one of my favorite ways to make enchiladas.\u00a0 Plus, I&#8217;m a big chicken fan and I&#8217;ll take this recipe, hands [&hellip;]<\/p>\n","protected":false},"author":1,"featured_media":5886,"comment_status":"open","ping_status":"open","sticky":false,"template":"","format":"standard","meta":{"_et_pb_use_builder":"","_et_pb_old_content":"","_et_gb_content_width":""},"categories":[3518,214,216,259],"tags":[277,1147,710,280,1148,1146,1440],"_links":{"self":[{"href":"https:\/\/poormansgourmetkitchen.com\/devsite\/wp-json\/wp\/v2\/posts\/1929"}],"collection":[{"href":"https:\/\/poormansgourmetkitchen.com\/devsite\/wp-json\/wp\/v2\/posts"}],"about":[{"href":"https:\/\/poormansgourmetkitchen.com\/devsite\/wp-json\/wp\/v2\/types\/post"}],"author":[{"embeddable":true,"href":"https:\/\/poormansgourmetkitchen.com\/devsite\/wp-json\/wp\/v2\/users\/1"}],"replies":[{"embeddable":true,"href":"https:\/\/poormansgourmetkitchen.com\/devsite\/wp-json\/wp\/v2\/comments?post=1929"}],"version-history":[{"count":9,"href":"https:\/\/poormansgourmetkitchen.com\/devsite\/wp-json\/wp\/v2\/posts\/1929\/revisions"}],"predecessor-version":[{"id":5887,"href":"https:\/\/poormansgourmetkitchen.com\/devsite\/wp-json\/wp\/v2\/posts\/1929\/revisions\/5887"}],"wp:featuredmedia":[{"embeddable":true,"href":"https:\/\/poormansgourmetkitchen.com\/devsite\/wp-json\/wp\/v2\/media\/5886"}],"wp:attachment":[{"href":"https:\/\/poormansgourmetkitchen.com\/devsite\/wp-json\/wp\/v2\/media?parent=1929"}],"wp:term":[{"taxonomy":"category","embeddable":true,"href":"https:\/\/poormansgourmetkitchen.com\/devsite\/wp-json\/wp\/v2\/categories?post=1929"},{"taxonomy":"post_tag","embeddable":true,"href":"https:\/\/poormansgourmetkitchen.com\/devsite\/wp-json\/wp\/v2\/tags?post=1929"}],"curies":[{"name":"wp","href":"https:\/\/api.w.org\/{rel}","templated":true}]}}
