Easy and Delicious Lit’l Smokies

I classify Lit’l Smokies as Finger Food and Tooth Pic Grub!  And, this recipe is so easy and delicious, it definitely should be on your party table this Holiday Season.  Since these little sausages are pretty much already made, all you’ve got to do is slow roast and caramelize.  It’s just a few simple ingredients and you’re off and running with other menu items because these really just cook themselves.  You may think the cook time is a bit ridiculous but, I cook them longer to change the texture of the meat.  You don’t have to do this but I definitely think it’s worth it.

1 20 oz pkg Lit’l Smokies
1/2 cup Barbecue Sauce
1/3 cup Brown Sugar
1 1/2 oz Tomato Ketchup
1 tsp Worcestershire Sauce

The Best Firecracker Shrimp

This Firecracker Shrimp Recipe is a very fast and simple way to just knock out a great appetizer that everyone can enjoy.  There are many different ways you can make these and as you can see I’ve chosen the easiest way to demonstrate by practicality and availability so that everyone can enjoy these little poppers.  The more authentic version requires Spring Roll Wrappers which aren’t often, if at all, stocked in regular grocery stores.  That is why I’ve chosen the Wonton Wrapper because they’re made more readily available.  To make these Firecracker Shrimp you only need a few ingredients, which I’ll list below.

Other Firecracker Shrimp Recipes

The more commonly known Firecracker Shrimp recipe is different than this appetizer and it is normally served as a side or main dish.  Some restaurants even have it listed on their menu under a different name; Bang Bang Shrimp.  But they are, both, one in the same and it doesn’t reference the look of the firecracker as much as it does the spiciness of the dish.  It’s generally made with pre-fried, battered shrimp with Red Chili’s and a sweet and spicy sauce.  And, lucky for you, I just so happen to have the number one fried shrimp recipe on YouTube, so all you have to do is combine that recipe with the sauce and you’ll be on your way.  Click Here for that recipe!

 

Firecracker Shrimp Ingredients:

1 pkg Wonton Wrappers
2 lbs Medium or Large Shrimp
1/4 cup Water for Wrappers
Oil for Frying

Spicy Mayo Sauce

1/4 cup mayonnaise
1 tbsp Sriracha

Peal and de-vain Shrimp but leave the tails attached.  Roll each Shrimp in one Wonton Wrapper, leaving the tail out, one half roll, then fold the bottom of the wrapper over the end of the shrimp like a burrito and roll the Wrapper and Shrimp together as one until you reach the furthest edge and stop.  Dab the edge with water and seal by pressing firmly.  Fry at 350 degrees for 4 minutes or until golden brown.  Mix the two ingredients together for Spicy Mayo, adjust for taste and enjoy your Firecracker Shrimp.

Hard Boiled Scotch Eggs

I love Scotch Eggs and if you are at all a fan of breakfast food, you’ll love them too if you don’t already.  What this recipe consists of is basically just a boiled egg that is wrapped in a thin layer of sausage, then rolled in seasoned bread crumbs and fried.  They are very simple to make and very tasty.  Though, I do prepare a hard boiled version of this recipe, it is very common for the eggs to have a runny yoke in the middle.  So if that’s something you prefer, you will most likely have to cook soft boiled eggs instead and that’s entirely up to you.

How To Make Scotch Eggs

For this Scotch Eggs Recipe, start by boiling the eggs, then set out 3 bowls for dipping.  Season the flour with the salt, pepper and paprika in one bowl.  In another, beat the eggs to make a wash.  In the third bowl you will add the bread crumbs.  If you are using the stuffing, add the crumbs to a food processor with the parsley and pulse until smooth.  Cut the Sausage into 12 equal portions, then press and roll flat until each is about 1/4 of an inch thick, then wrap around each boiled egg pinching off the excess and pressing with both palms together with light pressure to form each shape.  Then roll in flour, then the egg wash and bread crumbs, again applying pressure with both palms but firmly to assure the crumbs stick.  Then let them rest for 5 minutes before frying.  For deep fryers, cook at 350 for 3 1/2 Minutes.  For pan frying, cook in 1 1/2 inches of oil for about 8 minutes, on low heat, turning over once.  Dab on paper towels then serve your Scotch Eggs or refrigerate.

Scotch Eggs Ingredients:Herb Seasoned Stuffing

1 dozen Boiled Eggs
1 1/2 lbs Pork Sausage
2 eggs, for wash
1 cup Seasoned Flour
1/2 tsp Salt
1/2 tsp Black Pepper
1/3 tsp Paprika
1 cup Seasoned Stuffing Bread Crumbs, (or Panko)
1 pull fresh Parsley, 2 tbsp worth
Oil for frying
