This Extra Crispy Fried Frog Legs recipe is awesome, sleek and, yes, SEXY!  I put together a marinade and breading that would make any finger licking fried chicken fan go Goo-goo for Frog Legs.  So if you’ve never tried frog legs or you’re a die hard fan, this Recipe is for you because this is the absolute best way to have them.  Just look at this pic straight out of the fryer and try not to drool.

Frog Legs in Restaurants

My personal experience with Frog Legs has been, up close and personal, in the South, where all good things seem to get bigger, better and bolder with egos and good old fashioned Southern Hospitality(which is amazing by the way).  Frog Legs are on the menus at many of the localized restaurants, including Chinese Buffets.  So I’ve had my fair share of recipes out there and I have learned a lot about what folks expect them to taste like.  So trust this recipe, because, I think you’re really going to enjoy it!

Fried Frog Legs Ingredients:

6 whole Frog Leg halves or 12 Legs total

Marinade
1 egg
1/2 pint Buttermilk
1/4 Hot Sauce

Breading
1 cup Self Rising Flour
1/2 cup Corn Flour
1/4 cup Potato Starch
1/4 cup Panko
1 tbsp Crab Boil Seasoning (Zatarain’s or Slap Ya Mama)
Oil for Frying

Fry the Frog Legs at 350 degrees Fahrenheit for 10 minutes or until golden brown.

Sweet Potato Casserole – Southern Style with Marshmallow and Walnuts

The Best Sweet Potato Casserole

This is, hands down, the absolute best Sweet Potato Casserole I have ever had, I swear!  And if that’s not enough of a selling point, I’m talking about Butter, Sugar, Cinnamon, Marshmallows and an awesome Walnut Crisp Crunch on top.  This is a classic Southern recipe that can be served for any dinner; especially Thanksgiving.  But this dish is so fresh and sweet you could top this off with some Vanilla Bean Ice Cream and serve it for dessert, it’s that good.

How I like my Sweet Potato Casserole

I’ve mixed the ideas of several different Sweet Potato recipes to develop this dish.  I love the traditional way my Grandmother always made it; sliced with toasted marshmallows over the top.  But, I also love the Southern style with a Walnut Apple pie style crisp or with Pecans, if you prefer.  Either way is delicious but when you combine the two, you end up with a symphony of flavors that just dance around your mouth with every bite.

Sweet Potato Casserole Ingredients:

4 Sweet Potatoes, peeled and sliced

Sugar Butter Sauce
1 stick Butter, melted
1/2 Cup Brown Sugar
1/2 tsp Nutmeg, ground
1 tsp Cinnamon, ground
3/4 tsp Salt
1 tbsp Vanilla

Topping
1 Cup Dark Brown Sugar
1/3 Cup Flour
1/4 Cup Melted Unsalted Butter
1/2 Teaspoon Sea Salt
1 Cup Chopped Pecans
2 cups Marshmallows, small

Bake Sliced Sweet Potatoes in the Melted Sugar Butter Sauce, covered, for 1 hour at 350 degrees f.  Mix The topping ingredients, minus the Marshmallows, in a bowl and add it with the Marshmallows to the top of the cooked Sweet Potatoes.  Cook the Sweet Potato Casserole, uncovered, for 30 more minutes at 350 degrees f.

Jambalaya with Shrimp and Andoulli Sausage

You guys are in for a real treat if you like Jambalaya.  As always, I post recipes only as good as they come and the way I know they should be.  Nothing but the best restaurants in New Orleans serve Jambalaya like this and I’m going to teach you how to do it in the comfort of your own home.  i promise you, if you make Jambalaya like this the next you have friends or family over, no one is going to leave until you give them the exact ingredients.  Well, here it is, from Poor Man’s Gourmet Kitchen to yours.  Now go tear it up!

Jambalaya Ingredients:

2 Andoulli Sausages
1 lbs Shrimp, pealed and deveined
2 cups Rice
1/2 Onion, chopped
1 Bell Pepper, chopped
2 Garlic Cloves, chopped
1/2 tsp Anchovy Paste, or one crushed anchovy
1 cup Clam Juice
Chicken Broth (approximately 1 quart, watch video)
1 can Diced Tomatoes
1/2 can Tomato Sauce
1 tbsp Creole Seasoning (add more to taste for spice)
1 tbsp Worcestershire
1 1/2 oz Louisiana Hot Sauce, (or something similar like Tabasco)
Top off with Scallions
