If you’re looking for an easy yet amazing Tri Tip recipe, you’ve come to the right place.  This steak is marinated with a rub seasoning, I use on my Texas Style Brisket, with one other secret ingredient that will surprise you.  Plus, it’s topped off with a Chimichurri Sauce that is, out of this world, incredible.  So you get one of the most tender and juicy beef steaks, that is seasoned and seared on the grill and baked to perfection, with one of the best meat condiments ever created.

Cooking a Tri Tip Perfectly

One of the main secrets to a great Tri Tip is locking in the juice with a sear and cooking low and slow.  That means paying real close attention to the internal temperature while it grills, smokes or bakes.  In this recipe I use both the grill and the oven to get the temperature I want.  And since my personal tastes fall into the “medium rare” category, my target temp is around 130 degrees Fahrenheit.  Using an external meat thermometer helps meat get there perfectly because I can monitor the temp, outside of the oven, with out disturbing the cooking process by opening and closing the door.  And this can be done with grills and smokers as well.  So once you’ve decided your preferred cooking method of choice, you can set it and forget it.

Tri Tip Ingredients

1 Trip Tip Steak 3 to 4 lbs.
Salt and Pepper to taste

Brisket Rub
1/2 cup Smoked Paprika
2 tbsp Kosher Salt
2 tbsp Black Pepper
2 tbsp Sugar
1 tbsp Chili Powder
1 tbsp Cumin
1/2 tsp Garlic Powder
1/2 tsp Onion Powder

Mix 3 parts Brisket Rub with 1 part Coffee grains.

Easy Bourbon Chicken

This Bourbon Chicken recipe is a tasty way to spice up your Chinese home cooking.  It’s an old recipe from the Godfathers of the South, downtown New Orleans, in the French Quarter, right on Bourbon Street.  Some say that’s where this recipe get’s it’s name and others think there’s actually Bourbon in the recipe. Either way, it’s a fun recipe and it will definitely impress your audience, it’s that good!

Bourbon Chicken Ingredients:

2 Chicken Breasts or 6 Boneless Chicken Thighs
1 Garlic Clove, chopped
1/4 tsp Fresh Ginger, chopped
3/4 tsp crushed red pepper flakes
1/4 cup Apple juice
1/3 cup Brown sugar
2 tbs Ketchup
1 tbs Apple Cider vinegar
1/2 cup Chicken Broth
1/3 cup Soy Sauce
1 tsp Corn Starch
1/4 cup Bourbon or Southern Comfort
Canola Oil for frying

Chicken Marinade
1 egg
1 tbsp Canola Oil
1 pinch of Salt and Pepper
1/4 cup Corn Starch

Blackened Chicken Alfredo

The Best Chicken Alfredo

I love Chicken Alfredo and this particular recipe is a favorite of mine because it holds everything that I love and hold dear to my heart, when it comes to Italian food.  I’m talking about pasta tossed in Alfredo, topped with marinated and grilled Chicken(Blackened), and fresh chopped Tomato and Parsley.  So it’s a hearty dish with plenty of Carbs, Fat and protein.  What more could you possible want on your plate?

Chicken Alfredo in Restaurants

There’s no doubt that Chicken Alfredo is very common and popular, these days, among most Italian restaurants.  You can even order it on a pie from your favorite pizza delivery service.  But every where I go it’s always made a little different.  Seems like everyone has got their own way to of making white sauce.  And there are some really good recipes out there, however, there are some that are just plain awful.  So you really have to be careful with who you trust to make your sauce.  This particular recipe is a copy cat of local restaurant here in town called, “Wingers” and it’s fashioned around the idea of an old “50’s” style diner.  They serve popcorn, wings and the best Vanilla Coke in town.  They also have a recipe called Blackened Chicken Alfredo on their menu and I order every time I’m there.

Blackened Chicken Alfredo Ingredients:

2 to 4 boneless Chicken Thighs (one for each plate)
1 pkg Lemon & Herb Marinade (or your favorite marinade)

Pasta
2 cups Penne Rigate Pasta (or your favorite)
1 tsp Salt (for boiling water)
4 tbsp Olive oil (2 for Boiling water and 2 after pasta is cooked)

Alfredo Sauce
1 tbsp Unsalted Butter
1 chopped Garlic Clove
1 chopped Green Onion
3 tbsp chopped Red/Green Bell Pepper
1 cup Whipping Cream
1/3 cup Parmesan Cheese
1 tbsp Creme cheese

Topping
1 chopped Roma Tomato
2 tbsp fresh chopped Parsley
Salt and Pepper to Taste

Marinate the Chicken and start Grilling First, then start boiling the water and season with salt and olive oil.  Cut all the veggies.  In a hot skillet on High, add butter, Garlic, Scallions and Bell Pepper.  Saute for 1 minute then add creme 1/4 cup at a time.  Stir, boil then add until it’s gone.  Add Parmesan Cheese and Cream Cheese, then take off the heat.  Be sure to watch the chicken and turn once after chicken has Blackened with Grill marks (not Burned).  Strain Pasta, add remaining olive oil, then stir into Alfredo Sauce.  Lay each serving of pasta down first, on a plate, then cut each Grilled Chicken Thigh into 1/4 inch slices and lay over the pasta, and garnish the Chicken Alfredo with some chopped Tomato and Parsley, then serve.
