I Love Jalapeno Popper Dip

This Jalapeno Popper Dip is a fun way to kick off any meal.  It’s also great for parties and barbecues.  I mean, who doesn’t love Poppers?  The great thing is you don’t have to fight over who gets the last one.  When you’ve got a dip like this one, the only thing you have to watch for is those sneaky double dippers!

If you’ve ever had bacon wrapped Jalapeno Poppers, you know they rock.  So I made sure to add some bacon to this recipe as well.  In the video recipe, I dip with Corn Chips but, truth be told, I honestly think it’s better with a Ritz or House Cracker.  I’ve even seen some people go for the toasted baguette but that’s entirely up to you.  This Jalapeno Popper Dip Rocks either way.  Just be sure to tell your friends where you got this recipe.

Jalapeno Popper Dip Ingredients:

5 Large Jalapenos, de-seeded & chopped
5 pcs Bacon, chopped
1 Green Onion, chopped
1/4 cup Fresh Cilantro, Chopped
2 pkg Cream Cheese
1 cup Colby Jack Cheese, grated
1 cup Sour Cream
1 cup Seasoned Bread Crumbs
1 Cup Parmesan Cheese
2 tbsp butter
Salt and Pepper to taste

Bake the Jalapeno Popper Dip at 350 degrees Fahrenheit for 15 minutes.

Thai Red Curry Shrimp – Spicy Prawns Recipe

This Thai Red Curry Shrimp recipe was just the thing I needed to film this week. With Independence day just around the corner, I thought a spin on the traditional “Shrimp on the Barbee” was in order.  Though I pan fry in this video recipe, there’s no reason why you couldn’t take these straight to the grill after the Prawns are marinated.

I lucked out at the super market when I found these whole jumbo shrimp with heads.  That’s not normally how I buy them.  But they give that Awe and Wow effect when they’re served this way.  And just so you know, you don’t have to have whole jumbo’s .  Just use what you’ve got and what’s available.

Thai Red Curry Shrimp Ingredients:

1 lbs Jumbo Shrimp, Whole (8 to 10)

MARINADE
2 Garlic Cloves, chopped
2 tbsp Thai Red Curry Paste
1/4 cup Fish Sauce
1 Lime, juiced
1 tsp Kosher Salt

Splash of Sherry or White Wine when cooking the shrimp (about 2 tbsp)

Topping
3 tbsp Butter, melted
2 tbsp Thai Red Curry Paste
1 tsp Fresh Thai Basil, chopped
1/2 tsp Red Chili Flakes

For the Topping, combine the melted butter with the curry paste, add a pinch of Kosher salt, the Chili flakes and chopped Basil.

The Best Spare Ribs

This Barbecue Spare Ribs recipe is fall off the bone tender and absolutely delicious.  The best part is, you can use any barbecue sauce you want and still get the same results.  So if you’ve already got a favorite recipe you like to whip up or one that is already bottled, you can skip the barbecue sauce preparation altogether.  Just a rack of ribs and a cup of sauce is all you’re going to need to bake these ribs to perfection.

How to make Barbecue Spare Ribs Tender

The secret, for Barbecue Spare ribs, lies in the slow and low method.  This recipe takes a total of 3 hours from beginning to end but it is worth it.  As you can see in my video recipe tutorial, the meat will just melt in your mouth.  And as far as P.F. Chang’s recipe is concerned, the truth is, this recipe is better and I say that for two reasons.  First, Chang’s doesn’t season their ribs; just a barbecue sauce marinade for 24 hours. Second, they cook their ribs in half the time I’m recommending and at a higher temperature, so the ribs aren’t as tender.  That being said, I highly suggest that you use this slow and low method if you want the best results.

Barbecue Spare Ribs Ingredients:

1 rack Spare Ribs
1 cup Barbecue Sauce
1 tbsp Seafood Boil Seasoning (Zatarains, Slap Ya Mama or Old Bay), optional

Clean and cut the Spare Ribs and bake covered at 300 degrees f for 2 1/2 hours, then bake uncovered at 350 degrees f for 20 minutes.
