Roast Duck – Seasoned and Stuffed

This Roast Duck is Fantastic

Here’s a Roast Duck recipe that I would highly recommend.  It’s very easy to prepare and the taste is out of this world.  I stuff the duck with a wonderful array of aromatic flavors that completely permeates the breast from the inside out when it marinates and bakes and I Salt the outside with Kosher and Smoked Paprika, leaving you with an irresistible taste and an unforgettable experience.

If you are looking for more of an Oriental Style recipe, like a Cantonese or Peking Duck recipe, just follow my Cantonese Chicken recipe.  It’s the exact same recipe that P.F. Chang’s uses on their Cantonese Duck and Chicken recipes.  I also have recipes for Beer Can Chicken, a Tin Can Chicken Brine and a tutorial to teach you How to Carve Whole Poultry.

Blackened Chipotle Tilapia

Spicy Tilapia Main Pic

Chipotle Adobo Tilapia

This Blackened Chipotle Tilapia recipe is exactly how it sounds; spicy and delicious.  You get a buttery filet that sears just enough to turn color but leave you with a tender fluffy-flaky fish that just melts in your mouth with every bite. And Thanks to the Adobo Sauce in the is recipe, you get a nice kick too which delivers a little bit of heat that I like to balance out with a mix of Mango, fresh Mint, Pineapple and Red Onion.

Tilapia Mango and Pineapple Mix

One thing that I’ve learned over the years is that fish and fruit is always a good pairing.  P.F. Chang’s uses this Mango mix in their Curry Chicken Salad and it works really well with this too.  So you get the best of both worlds because your tongue gets to dance back and forth between a sweet, minty fruit and a drenched, spicy Chipotle Tilapia.

If you’re interested in more of my favorite fish recipes I would highly recommend my Smothered Salmon and my Grilled Halibut in Lemon Butter.  My Trout Amandine is especially delicious, if you’re into fishing.

Smothered Salmon

The Best Smothered Salmon

This Smothered Salmon recipe is something I came up with years ago.  My wife has a serious love for this fish so I wanted to create something that was undeniably the best and believe it or not, this recipe can be prepped and cooked in just 15 minutes.  It has a Garlic, Wine and Butter Broth that is just amazingly smooth.  I actually use this to saute the Onions and Peppers as well as steam the fish.  I like to prop the Salmon right over the top of the veggies so the filet can steam from below as well as from above when I top the pan with a lid.  Then after just a few short minutes I smother the fish with Mozzarella Cheese, then cover back up with the lid long enough for it to melt.  Once it has, you have a perfectly cooked Salmon that is ready to serve.  Total cooking time is, approximately, 6 to 7 minutes.  And once it hits the plate, I dash pieces of Bacon, I sprinkle freshly chopped Parsley and then I splash some Balsamic Vinegar right over the top.
