Easy Egg Noodle Lasagna

One of the things I’ve always loved about Lasagna is the layers of flavor stacked into the noodles.  I’m a big tomato and cheese fan so, much like pizza, this dish always hit home for me.  The thing I don’t care for so much, about a traditional lasagna recipe, is the fact that it takes so long to make.  This Egg Noodle Lasagna is a wonderful recipe that knocks out almost half of the normal cooking time so, you can enjoy more eating instead of waiting eat.  And this recipe is just bursting with flavor as well.  Plus, it’s smothered and baked with cheese and has all of the other great ingredients that make any Lasagna so heavenly when it hits your pallet.

Egg Noodle Lasagna Ingredients:

1/2 lbs Ground Beef
1/2 lbs Italian Sausage (Mild or Hot)
1 tsp Anise
1 can Stewed Tomatoes, chopped Italian Herb
1 Can Tomato Sauce
1 tbsp Brown Sugar
1 tsp Black Pepper
1 1/2 tbsp Italian Seasoning
1 tbsp Oregano
1/4 tsp Onion Powder
2 Garlic Cloves, chopped
1 Green Onion, chopped
1 cup Ricotta Cheese
1/2 cup Heavy Cream
1/4 cup Parmesan Cheese
12 oz Egg Noodle, Cooked
1 cup Mozzarella Cheese, grated
8 basil Leaves
Olive Oil and Salt for the noodles and Boiling water

The Best Smothered Salmon

This Smothered Salmon recipe is something I came up with years ago.  My wife has a serious love for this fish so I wanted to create something that was undeniably the best and believe it or not, this recipe can be prepped and cooked in just 15 minutes.  It has a Garlic, Wine and Butter Broth that is just amazingly smooth.  I actually use this to saute the Onions and Peppers as well as steam the fish.  I like to prop the Salmon right over the top of the veggies so the filet can steam from below as well as from above when I top the pan with a lid.  Then after just a few short minutes I smother the fish with Mozzarella Cheese, then cover back up with the lid long enough for it to melt.  Once it has, you have a perfectly cooked Salmon that is ready to serve.  Total cooking time is, approximately, 6 to 7 minutes.  And once it hits the plate, I dash pieces of Bacon, I sprinkle freshly chopped Parsley and then I splash some Balsamic Vinegar right over the top.

Smothered Salmon Ingredients:

1 Salmon Fillet
1/2 Bell Pepper
1/2 Onion
2 tsp minced garlic
1/2 cube butter
1/4 cup white wine
1/2 cup Mozzarella Cheese
1 tbsp fresh or dried Parsley
1 to 2 tbsp chopped Bacon or bits
1 tsp Balsamic Vinegar
Salt and Pepper Salmon to taste
Pinch of cayenne pepper

The Best Garlic Mashed Potatoes

These Garlic Mashed Potatoes are awesome, simple as that.  And I can go on about it for several reasons.  But first, know that most mashed potato recipes are very similar if not exactly the same.  So, how are you going to reinvent something that cooks think they have already perfected?  The answer is simple.  Just think Potato.  There are so many different kinds of potatoes, plus many ways to cook potatoes.  So all you have to do is go back to the basics, keep it simple yet powerful.

My Mashed Potatoes Secret Ingredient

For me, I love potato chips.  One in particular, in fact, Potato Skins.  That’s one of the reasons I leave my skins on in this Mashed Potatoes recipe; that and the nutrient factor, of course.  Also, when I eat chips or a baked potato, I usually have Sour Cream.  Now, there isn’t Sour Cream in this recipe but most recipes use milk, half and half or cream.  But why hasn’t anyone tried to use Buttermilk?  It’s sweet and sour, just like sour cream, and most folks like it with their baked potato.  Believe it or not, it is the perfect balance; that and the other ingredients I’ve added down below.  Anyway, these potatoes are great anytime but I think they’re even better around the Holidays.  So give this a try and don’t forget to leave your comments.

Garlic Mashed Potatoes Ingredients:

6 to 8 russet or red potatoes, boiled
2 garlic cloves, chopped
2 tbsp fresh parsley, chopped
1 cube butter
1 tsp kosher salt
1 tsp Black pepper
1 1/2 cups Buttermilk
