Lomo Saltado – Asian and Spanish Fusion

Lomo Saltado was first introduced to me through my wife at my Mother in Laws house.  It’s a Peruvian family tradition in her family.  And because it’s one of her favorite dish’s, I have pursued and studied many different recipes.  I now believe I have come up with the best way to cook Lomo Saltado and if you asked my wife, she would agree.

Now if you don’t know what this recipe is all about just imagine Asian and Spanish Fusion.  And, the very name, “Lomo Saltado” is clearly pointing to the salt content.  Some of which comes from the soy sauce.  That’s not to say that this is a Salty dish, just that nearly all of the major ingredients are salted; the Beef, the soy marinade and the french fries.  I hope you give this a try!

Lomo Saltado Ingredients:

1/2 lbs Sliced Beef, Bottom Round Chuck
12 to 15 French Fries
2 Garlic Cloves, chopped
1/2 cup Fresh Cilantro, chopped
1/4 Red Onion, sliced
1 Tomato, sliced
2 Yellow Peppers, sliced
2 tbsp Lemon Juice
1 tbsp Balsamic Vinager
1 tbsp soy Sauce
1 tsp Cumin
1 tsp Kosher Salt, or to taste

Macarons – Dana’s Bakery Review

Tasty Macarons

French Macarons are amazing.  In the words of Martha Stewart, “Macarons are light-as-a-feather French confections that can be assembled pulling from a mix-and-match palette of sweet fillings and bases.”  I had an opportunity, recently, to give a review of one of the best American Macaron bakery’s in the nation, Dana’s Bakery.  So unfortunately, this is not the Poor Man’s recipe for Macarons but a high recommendation of another American based business that can deliver your needs for any event; be it Weddings, Corporate Gifts or Special Occasions.

Dana’s Bakery

Dana’s Bakery sent me a dozen of their Macarons and they didn’t spare any expense.  I was, however, disappointed in the care of FedEx because my package was smashed in and torn on one end.  Luckily, though, it didn’t damage my order because Dana’s Bakery took extra care to package the Macarons with bubble wrap and a profession insulated thermal bag and a refrigerated Jelly pack to keep it cool during shipping.

As you’ll see in the video review below, I tried everyone of these little delicacies and I firmly believe that Dana’s Bakery certainly knows what they’re doing when it comes to Macarons.  Their flavors were off the wall delicious and I think you to will agree.  So definitely give them a try and be sure to tell them Poor Man’s Gourmet Kitchen sent you!

Lobster Sauce

The Best Lobster Sauce

If you’ve ever ordered Lobster Raviolis or pasta with a Lobster Sauce from an Italian Restaurant and they prepare it right, it truly is stunning.  It can be prepared several different ways but it usually always has cream.  You can even put roasted tomatoes in it if you’d like but I like it best prepared the way I show you in this video recipe.  There’s also a nice touch of almond in the sauce that tastes real sweet thanks to the added Amaretto.  You’ll swear you’ve died and gone to Italian Heaven.

Lobster Sauce Ingredients:

8 oz Cheese Raviolis or Pasta, cooked
2 Lobster Tails, cooked
2 oz unsalted butter
1 Garlic Clove, chopped
1 Green Onion, chopped
2 tbsp Fresh Parsly, chopped
1/2 tsp anchovy paste
3/4 cup Lobster Stock or Clam Juice, with Crab boil seasoning
2 ounces Amaretto or cognac
1/2 cup heavy cream
1 tbsp Lemon juice, freshly squeezed
2 tbsp of Parmesan Cheese
