Here’s a Hot Chocolate recipe you’ll want to bookmark for sure.  It’s got everything you’d expect any great recipe to have including a Toasted Marshmallow taste and froth.  It’s so easy to make too and it’s perfect for this Holiday Season.

Hot Chocolate Ingredients:

4 tbsp Cocoa Powder, unsweetened
4 tbsp Sugar
1/8 tsp Salt
2 cups Milk
1/2 tsp Vanilla

Toasted Marshmallow
1/4 cup French Vanilla Coffee Creamer
1/4 cup Marshmallows

Vegetable Chili – 100% Vegetarian Chili

Vegetable Chili

This Vegetable Chili, for me, is really exciting.  Because this time of year I get to start, slowly but surely, harvesting what I’ve been growing in my garden all summer long.  In this video I was able to use my Zucchini and Yellow Squash.  Everything else unfortunately isn’t ready to be picked yet but I was able to pick up those ingredients at the store.

I’m using 4 different kinds of beans in this recipe; Pinto, Black, Red and Garbanzo Beans but you can use whatever you like.  The basic idea behind this recipe starts with the Cajun Holy Trinity; Onions, Celery, Bell Peppers and chopped Garlic.  Then I like to work my way up the pot with the larger vegetables, Tomato Sauce and then the seasonings before I add the beans.  But once all 4 cans of those are in, I add the broth and simmer for 10 minutes with the lid.  In no time you will have the absolute best Vegetarian Chili you have ever had.  In fact the only thing that would make this Vegetable Chili recipe better is Chicken!

Vegetable Chili Ingredients:

1 can Pinto Beans
1 can Black Beans
1 can Red Beans
1 can Garbanzo Beans
1 can Tomato Sauce
3 Cups Vegetable Broth

1 Onion, chopped
1 Bell Pepper, chopped
1 Celery Stick, chopped
1 Garlic Clove, chopped
2 Roma Tomatoes, Chopped
1 Zucchini, chopped
1 Yellow Squash, chopped
1 Corn on the cob, sliced
1 Chipotle Pepper in Adobo Sauce, minced
1/3 cup Fresh Cilantro, chopped
3 tbsp Olive Oil, for sauteeing

1 tsp Coriander
1 tsp Chili Powder
1 tsp Garlic Powder
1 tbsp Cumin
1 tbsp Oregano
1/2 tsp Cocoa
Salt and Pepper to taste

So I got this Chili No Beans idea at Taco Bell the other day.  They’re always adding crazy new stuff to their Menu and it just got me thinking.  First off, their food is munchie delicious.  You know what I mean.  The kind of food you crave when you’ve got the munchies.  And I swear their staff has got to be stoned half the time when they come up with these recipes.  Anyway, I got thinking about how tender their ground beef is in all of the Tacos and Burritos and then it dawned on me.  It’s got to be a slow cooker.  So I ran home and made up this recipe and it’s just as good if not better.  The real benefits though, however, aren’t that you can now replicate Taco Bell food but you can use it for all kinds of things like Chili Cheese Dogs and Nachos and who’s going to complain about that.  So here is a real easy and simple way to make Chili No Beans and you’re going to love it!Chili No Beans 2

2 lbs Ground Beef
1 lbs Pork Chorizo (or beef)
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
1 tsp Black Pepper
1 1.25 oz pkg Taco Seasoning (regular or Mild)
