If you’ve never had fried Crisp Chicken Burritos, you’re really missing out.  Most folks would just call these Chicken Chimichanga’s, and they wouldn’t be wrong either, but Taco Time likes to call them Crisp Burrito’s.  I filmed and posted Taco Time’s Fried Crisp Bean Burrito recipe a while back, which is their original recipe, and those are phenomenal but they introduced these a few years later, with their beef recipe, and they quickly became one of my new favorite burritos.  I order these every time I hit the drive through.  You can make the Beef Crisp Burritos, using this same concept, by referring to my Chili No Beans recipe, if you’re interested.

Crisp Chicken Burritos Filling

The filling recipe for these Crisp Chicken Burritos is very simple and easy to make.  It consists of four parts; cooked ground chicken, chopped onion, chopped green chili’s and cream cheese.  Technically you could get away with using canned chicken, if you want to make it even easier, but I find that cooking my own chicken tastes better and it reduces the sodium content drastically.  Now all you have to do is salt and pepper to taste.

Frying Crisp Chicken Burritos

The secret to Frying an open end Crisp Chicken Burrito is simple.  Place about 4 ounces of the chicken and cream cheese mix in the center of a flour tortilla and spread it thin in the middle, leaving about a half inch of space on each end of the tortilla.  Rolling the burrito tight is very important and sealing the end of the tortilla with a flour paste will insure that the burrito won’t unroll or unravel while frying.  I can use a tooth pic to keep them together, if you prefer, but this is the professional way to do it.

Crisp Chicken Burritos Ingredients:

16 Flour Tortillas

2 lbs Ground Chicken, Breast, Thighs or both
8 oz Cream Cheese
1/2 Onion, chopped
4 oz Green Chilies, chopped
1/2 tsp Smoked Paprika, (optional)
Salt and Pepper to taste

Flour Paste
1/4 cup of flour
1/4 cup of water

Oil for frying

Follow the directions in my Crisp Chicken Burritos video tutorial and deep fry at 350 degrees Fahrenheit for 2 to 3 minutes or until golden brown.

The Best Chicken Wings Ever

These Honey Chipotle chicken Wings are, by far, the best wings I have ever had.  They are sweet and savory, they are crispy and spicy yet incredibly tender and juicy on the inside.  They have best flavor of just about any barbecue sauce and we’ll talk about the secret to that in just a minute.  But I definitely think that the grilling definitely takes this recipe to a whole new level.  But don’t let that scare you if you don’t have a grill.  I think these spicy buffalo style wings would still be absolutely fantastic fried in oil or baked in the oven.

Honey Chipotle Chicken Wings Sauce

This Chicken Wing Sauce is phenomenal.  I mean it.  I’t fantastic.  My secret for this recipe is definitely in the sauce.  I use Sweet Baby Ray’s barbecue sauce to start, then I add a couple of Chipotle peppers in Adobo Sauce and a fresh clove of Garlic but it doesn’t end there.  Since it’s got that pepper spice I balance it out with Tequila and Lime.  Now, of course, the Tequila is optional but the lime is definitely essential because it adds that Mexican style flavor everyone loves in their Mexican food.  But if you’re not shy, I highly recommend following this recipe to a “T” and add that Tequila.  It takes this Honey Chipotle Chicken Wing Sauce to whole new level.

Honey Chipotle Chicken Wings Ingredients:

3 to 4 lbs Chicken Wings

Chicken Wing Brine
4 cups Water
1/4 cup Salt
2 cups Ice

Honey Chipotle Sauce
1 cup BBQ Sauce (Sweet Baby Rays)
2 Chipotle Peppers in Adobo Sauce, blended
1 Garlic Clove, chopped
1/3 cup Honey
2 oz Tequila
1 Lime, freshly squeezed

Grill Chicken Wings over medium heat for 20 minutes, turning every 5.

This Roast Duck is Fantastic

Here’s a Roast Duck recipe that I would highly recommend.  It’s very easy to prepare and the taste is out of this world.  I stuff the duck with a wonderful array of aromatic flavors that completely permeates the breast from the inside out when it marinates and bakes and I Salt the outside with Kosher and Smoked Paprika, leaving you with an irresistible taste and an unforgettable experience.

Cantonese Roast Duck

Roast Duck Ingredients:

1 Duck, at room temperature

Filling
1 tbsp Kosher Salt
1 tsp Ground Sage
3 Garlic Cloves, crushed
2 Sprigs Fresh Rosemary
1 Bunch Green Onion

Rub & Basting
1 tsp White Vinegar
1 tsp Honey

1 tbsp Kosher Salt
1 tsp Smoked Paprika

Bake at 350 degrees f. for 1 hour and 30 minutes and your Roast Duck will be perfect.
