This Prime Rib Standing Rib Roast is a Prime example of what Poor Man’s Gourmet Kitchen is all about.  I saved $20 bucks on this beef due to the fact that I scored a sale.  If I bought this Roast before Christmas day it would’ve cost me well over $55 dollars with tax.  The grocery store over stocked for the holidays, however, and that price dropped dramatically when they weren’t selling.  Instead of risking the complete loss with a toss, their loss is my gain.  There is only 2 days left on the expiration date but the meat still looks great.  And, after the price drop, there was an additional $5 dollar off coupon attached to the label, so this 7.5 lb Rib Roast only cost me $30 bucks!

Prime Rib is my Favorite

For me, Prime Rib was so easy to fall in love with.  I grew up eating the worst cuts of meat because my Mom just didn’t know what she was looking for when she would shop for steak.  Plus she was always buying the cheapest cuts to save money so we never got anything good.  And to make matters even worse, though she loved to cook. she wasn’t very good at it.  But for the longest time, i thought it was me.  I didn’t think I liked steak at all.  I had no idea that I just hadn’t had the right cuts or had it prepared right.  So if you can imagine the look on my face, the first time a slice of Prime Rib, with Aju, melted in my mouth, you can probably understand why this steak instantly became my absolute favorite.

Prime Rib Standing Rib Roast Ingredients:

1 Beef Rib Roast
1/3 cup Olive Oil
Salt and Pepper
Aju (optional)
Horseradish (optional)

Marinade
4 Garlic Cloves, chopped
1/4 tsp Salt
1/4 tsp Black Pepper

Approximate cooking times and required temperature based on a 4 to 6 pound rib eye roast in a 350 degrees Fahrenheit oven:

RARE (120-125 degrees F): 18 to 20 minutes per pound
MEDIUM RARE (125-130 degrees F): 20 to 22 minutes per pound
MEDIUM (130-135 degrees F): 20 to 24 minutes per pound
MEDIUM WELL (135-140 degrees F): 22-24 minutes per pound
WELL (145+ degrees F): 22-26 minutes per pound

Cover the Rib Roast with Salt and Pepper, especially the fat side.  Then combine all the marinade ingredients and let it sit for 5 to 10 minutes and coat the entire roast with the marinade, gently massaging the mixture into the meat on all sides.  Refrigerate for 24 hours if possible, then roast at 350 for 20 to 22 Minutes per pound (below is a basic meat time and temperature guide).  Let the Roast cool for 5 minutes before cutting into the meat after cooking.  Then serve each Prime Rib Steak with Aju and Horseradish.

A Succulent Turkey Every Time!

I’ve got a lot going on this week, as everybody does but my wife and I are even celebrating our Anniversary, so I’m not quite certain if I’ll be getting any other recipes up this week.  Though I do want to remind everyone that I have filmed several Holiday recipes and even a few twists on a few classics.   So definitely take advantage of the Holiday Video Play list On the Lower Right side of this Page.  I do think it is important to mention a little something about the bird that Most everyone will be eating this Thanksgiving Holiday.  Turkey’s need to be Brined. If you are looking for seasoned succulent meat that isn’t dependent on gravy, has a ton of flavor and is so tender you’d think a pro baked it, Brine that turkey.  I did have the perfect Video to show you how to do it step by step but the food network made all of the users take them down and I can’t find it anywhere. The point is, there is a science behind the brine and that’s why it works so well. I’ll film a video on it soon so we don’t have to worry about it being taken down. What’s the Deal with Bread Twists?

Bread Twists for me, started when I was a young man.  I would camp with some friends near a reservoir we would boat and fish on, and we would twist canned biscuit dough around our Hot dog and Marsh mellow skewers to make “Bread Twists”!  Now I don’t now if this is something everyone else does elsewhere, but I’ve never seen anyone else do it since.  However, there is a local Pizza Joint here, that shall remain nameless, that has branded their very existence around them.  They are so good, I thought I’d share a real simple way to make these yourself at home.

 Rhodes Texas RollsInstead of going through a whole dough recipe and having to worry about the yeast and what not, do yourself a favor and pick up a frozen bag of dinner rolls.  I used these Texas Rolls made by Rhodes because they are 50% larger than the average dinner roll, so it gave me more Twist to work with.  The great thing about a pre-made dinner roll is that they’ve taken all the guess work out of making a fluffy light bread, which is the key to making perfect Bread Twists.  It is critical, however, to follow the thawing instructions and let the dough rise properly.  Once you’ve done that, roll them out with some flour into a long cylinder shape that you can then roll flat with a rolling pin.  Then using a Shish Kabob Skewer, pierce the tip on one end of the dough, then slide the dough to the bottom of the skewer and twist the dough to the end of the skewer and stab the tip of the remaining twist.  It’s important to let them rise back up again before baking so they remain fluffy when they cook.  I use a cake pan when I lay the Bread Twists Side ways in order for the bread to swell and cook down as well as out in every direction.  This also helps to brush the Garlic and herb seasoned butter over the top.

Bread Twists Ingredients:

12 thawed Dough Rolls and Skewers

4 tbsp melted Butter
1 tsp Garlic Powder
1/2 tsp Salt
1/2 tsp dry Oregano

Parmesan (Don’t mix with the Butter)

Mix all the Butter Topping ingredients together and brush the twists on all sides before and after baking.  The twists do tend to come unraveled during the handling, but they twist back just as easily. Shake Parmesan Over the top after they’ve been basted and bake at 350 degrees for approximately 10 minutes or until Golden Brown.  Because oven temperatures may vary, the time will too so watch them carefully because they cook faster when the dough has been rolled out and flattened for twists.  Bread Twists are great with Italian Pasta, Pizza or just Dipping in Marinara, Alfredo or Garlic and Olive Oil.
